I'm a firm believer that you can never have too much mashed potatoes! They make a creamy and starchy base for a number of amazing meals, from pot pies to croquettes, casseroles, and more!
40. Shepherd’s Pie (or the pot pies above)
Shepherd's pie is known for its signature mashed potato topping, which is the perfect way to use up leftover mashed potatoes! You can also use leftover lamb meat to make your shepherd's pie or leftover beef (which is called cottage pie)!
41. Potato Croquettes
Mix your leftover mashed potatoes with breadcrumbs, finely chopped herbs, and a touch of seasoning. Shape the mixture into small cylinders, then coat them in beaten eggs and breadcrumbs and fry until golden and crispy!
42. Cheese Croquettes
Cheese croquettes are similar to the potato croquettes above, with a mashed potato base and breadcrumb coating, but there's cheese! Fontina and Parmesan are personal favorites, though you can try it with whatever cheese you have on hand or prefer!
43. Korokke
Korokke is a Japanese version of croquettes made with a base of mashed potatoes and fried until golden and crispy. The recipe calls for Panko breadcrumbs, which give these potato pancakes the most amazing crunch!
44. Boxty Irish Pancakes
These fried potato pancakes are an easy way to give new life to leftover mashed potatoes. They're crispy on the outside, tender on the inside, and perfect for breakfast, lunch, or dinner!

Leftover Stuffing
Whether you call it stuffing or dressing, this dish is an essential part of any Thanksgiving Day celebration! Save your leftover Thanksgiving stuffing for casseroles or hearty stuffing-stuffed proteins like these:
45. Stuffing Stuffed Pork Chops
Take those extra scoops of stuffing and fill pocketed pork chops for a flavorful fusion of tender meat and seasoned stuffing. Bake until the chops are golden brown for a delicious dinner with Thanksgiving flavor in every bite!
46. Stuffing Stuffed Chicken Breasts
Slice a pocket into boneless, skinless chicken breasts, load them up with your leftover stuffing, and bake! Add cranberries for a pop of sweetness, or you can leave them off if you are all cranberried-out from the holidays!
I like to top my stuffed chicken breasts off with chicken gravy (or leftover turkey gravy if you have it). But that's totally optional!
47. Chicken Stuffing Casserole
For a comforting and easy post-Thanksgiving meal, whip up a chicken stuffing casserole using your leftover stuffing. Shred up some cooked chicken, add peas and carrots, cream of chicken soup, and seasonings, fold in the stuffing, and bake!

Generally, it's best to enjoy your Thanksgiving leftovers within 3-4 days (unless frozen). This applies to just about any food that needs to be refrigerated, whether it's Thanksgiving leftovers or not.

Remember, most food should not sit out at room temperature for more than 2 hours, or bacteria can grow. For a more specific guideline, follow these suggested storing times for the most traditional Thanksgiving recipes:

It's always a good idea to stock up on Tupperware, Ziploc bags, or disposable storage containers that guests don't have to return! Here are a few other ways to reduce the amount of Thanksgiving leftovers in your fridge:
- Have a Friendsgiving celebration: Friends are chosen family, and an after-thanksgiving celebration with all your besties is a great way to clear out leftovers! You can repurpose your food into the recipes above or call it a lazy potluck and let everyone enjoy each other's family's cooking!
- Send leftovers home with family: The minute you start cleaning up, ask who wants to take home some food! It's a goldmine for anyone who doesn't want to cook (college-aged me used to load up on Thanksgiving leftovers)!
- Freeze what you can: Meat, vegetables, potatoes, cranberry sauce, stuffing, rolls, and gravy all freeze quite well! You can always portion out some for freezing and keep the rest in the fridge to enjoy the next few days.

Thanksgiving Leftover Recipes: + All The Best Ways To Use Up Thanksgiving Leftovers!
Ingredients
- 2 tablespoon butter
- 2 cups ham (cooked and sliced into chunks)
- 2 tablespoon all-purpose flour
- 6-8 oz fresh mushrooms (sliced)
- ¼ teaspoon each, salt & pepper (to taste)
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 ½ cups chicken broth (low-sodium)
- 1 tablespoon Dijon mustard
- 6 oz frozen peas (thawed)
- 16 oz sour cream
- 16 oz egg noodles
Instructions
Make The Gravy Sauce
- Add 2 tablespoon butter to a large skillet over medium heat. Once melted, add 2 cups ham and saute it until warmed through.
- Add 6-8 oz fresh mushrooms, 2 tablespoon all-purpose flour, ¼ teaspoon each, salt & pepper to taste, ¼ teaspoon garlic powder, 1 tablespoon Dijon mustard, and ¼ teaspoon onion powder and stir to combine. Cook off the flour taste for 2-3 minutes.
- Pour in 1 ½ cups chicken broth and 1 tablespoon Dijon mustard and bring to a low simmer. Let simmer for 5 minutes or until thickened then add the 6 oz frozen peas and simmer for another 2-3 minutes to warm them through.
Assemble and Serve
- Remove from heat and stir in 16 oz sour cream until creamy. Cover while you boil the noodles.
- Meanwhile, cook 16 oz egg noodles as directed on the package. Drain the noodles (without rinsing) and add them to the sauce. Toss to combine.
- Cover and remove from heat. Let set for 10 minutes to thicken before serving.
Notes
- Ham is salty as-is. So, it's a safe idea to begin with less salt than written, then taste and adjust the seasonings at the end as needed.
- Fresh mushrooms like cremini or white button mushrooms work well. You can also use a mix of different mushrooms for more flavor.
- Greek yogurt makes a great alternative to the sour cream in this recipe. In either case, use the full-fat versions for the richest gravy.
- For presentation's sake, a sprinkle of fresh parsley will add a much-needed pop of color!
- Let your leftover ham stroganoff cool completely, then transfer it to an airtight container in the fridge for up to 4 days.
- Once cooled, you can freeze your leftovers in a Ziploc freezer bag for 2-3 months (squeeze out as much excess air as possible). Thaw frozen leftovers in the fridge overnight before reheating.
- Add the leftovers to a large skillet or frying pan over medium-low heat. Stir frequently until warmed through. You can quickly reheat individual portions of ham stroganoff in the microwave, too.
