    🥘 Ingredients

    • 2 cans Black Beans (15.25 oz cans drained or 1 lb dry - soaked, see notes)
    • 2 tablespoon Coconut Oil
    • ¼ large White Onion (minced)
    • 1 teaspoon Garlic (minced)
    • 1 tablespoon Cilantro (chopped+ more for garnish, if desired)
    • ½ tablespoon Taco Seasoning (store bought or use my recipe)
    • ½ cup Water
    • Queso Fresco (optional garnish)
    • Green Onion (chopped, optional garnish)

    🔪 Step-by-Step Instructions

    1. Heat coconut oil over medium heat in a large skillet or frying pan.
    2. Next, add the minced onion and garlic. Cook for 3-4 minutes stirring frequently.
    3. Add (drained and rinsed) black beans to the cooked onion and garlic, then add the chopped cilantro and taco seasoning mix.
    4. Stir ingredients together, then add water and continue to cook at medium high heat at a low boil for 10 minutes.
    5. Reduce heat, cover, and simmer for an additional 10 minutes.
    6. Garnish with green onions and queso (if desired). Serve immediately.

    💭 Angela's Tips & Recipe Notes

    • If using dried black beans, these must be prepared ahead of time. The must soak in water for at least 12 hours (they will expand) and then be cooked low and slow for about 2 hours, then drained before use.
    • Omit the queso fresco for a vegan version.
    • For additional flavor you can swap the water for any type of broth (vegetable, chicken or beef).
