Leftover Prime Rib Philly Cheesesteak Sandwich Recipe
Philly cheesesteaks are traditionally served with thinly sliced rib eye beef, so using your leftover prime rib beef is very close, even better, in both flavor and quality. What a fantastic way to use up your leftover prime rib roast! It's easy, and pairs your delicious leftover beef with sauteed onions and peppers, and melted cheese!
The sandwich has been an iconic part of Philadelphia's history since the 1930's and the exact origin is another one of those stories that will likely never be resolved. You can see the one claimed story per the Visit Philly website and even though wikipedia references a debate over the origin, no other story is mentioned.
Other toppings that are commonly used on 'authentic' cheesesteaks in Philadelphia are fried (or sauteed) onions and provolone cheese or Cheez Whiz, although white American cheese is also offered at vendors throughout Philly in our times.
Bell peppers are commonly used (because they're a great addition to my Leftover Prime Rib Philly Cheesesteak!) but are not a mainstay of the classic cheesesteak. However, this is an offshoot of the original that is commonly called a 'pepper cheesesteak'.

How To Make Leftover Prime Rib Philly Cheesesteak Sandwich

In a large skillet or frying pan, add olive oil. Bring to a medium high heat, until the oil is shimmering.

Add onion, garlic, and bell pepper. Saute until the onion is translucent and bell peppers are tender, about 5-6 minutes.

Move the sauteed onion and peppers aside. Add the cut leftover prime rib beef slices and heat through, about two minutes. Combine meat and sauteed onion and peppers, then season with salt and pepper.

Divide the cooked leftover prime rib beef into your 4 sandwich portions and top with provolone and white American cheese slices (total 2-3 slices per sandwich). Once the cheese has melted, transfer portions to toasted sandwich rolls using a spatula.

Top sandwiches with my creamy horseradish sauce, if desired.

Leftover Prime Rib Philly Cheesesteak Sandwich
Ingredients
- 1 tablespoon olive oil (extra virgin)
- 1 white onion (thinly sliced)
- ½ tablespoon garlic (finely chopped or crushed)
- 1 green bell pepper (thinly sliced, optional)
- 1 red bell pepper (thinly sliced, optional)
- 1 ½ lb leftover prime rib roast (thin sliced for sandwiches)
- salt & pepper (to taste)
- ½ lb provolone cheese slices
- ½ lb white American cheese slices
- 4 hoagie or torpedo rolls (sliced lengthwise - toasted, if desired)
- creamy horseradish sauce ((see recipe) optional)
