MAINS - Quesadillas & Burritos
If you ask me, these tasty quesadillas and burritos are where it's at. Burritos are a long-time personal favorite meal-on-the-go for me. Yum.

If you don’t have an air fryer, you can still make perfectly crispy quesadillas on the stovetop. I fill mine with cheese and use the quesadillas as a vessel for all my favorite dips and sauces, but you could easily add beef, chicken, or whatever you please.

The only thing better than melted cheese in a crispy tortilla is melted cheese and tender prime rib in a crispy tortilla. Any of my leftover prime rib recipes are delicious, but these prime rib quesadillas with a little salsa roja have to be my favorite.

You could serve leftover prime rib breakfast burritos on Cinco de Mayo, but they are even better the next day after fully enjoying the Mexican feast. Take one bite of this burrito stuffed with prime rib, eggs, avocado, rice, beans, and cheese, and be completely satisfied.

💭 Tips For Throwing a Seriously Fun Cinco de Mayo Feast
- Get a game plan. Choose your recipes ahead of time. Maybe some tasty chips and dip to start, a main dish that'll wow everyone, a few yummy sides, and something sweet to finish it all off.
- Don't forget the sides. Adding some flavorful Mexican rice, maybe some creamy refried beans, grilled corn on the cob, or a fresh salad will round out the meal.
- Prep ahead. Your hour-of-party self will thank you. Chop the veggies for the salsa and guac the day before. Get your meat marinating. Tres leches cake and pralines can be made in advance, but churros taste better fresh.

78+ Best Cinco de Mayo Recipes: Shredded Chicken Tacos (+More Great Ideas!)
Ingredients
- 3 large chicken breasts (boneless, skinless - approximately 1 ½ pounds)
- ½ tablespoon cooking oil
- ½ cup yellow onion (or white onion, minced)
- 1 teaspoon garlic (minced)
- 1 tablespoon chicken taco seasoning
- ½ cup salsa roja (see recipe, or your favorite brand)
(Note: 2x or 3x only changes the ingredient list)
Instructions
- Place the 3 large chicken breasts in a large pot (cut big pieces into manageable sizes that will cook quickly) and add enough water to fully cover them. Bring to a boil, then reduce the heat and let it simmer until the chicken is fall-apart tender, about 10-15 minutes. Chicken should be 165°F (74°C) before shredding.
- Remove the chicken using a slotted spoon and allow it to cool, then use two forks and pull the chicken meat into shreds.
- In a large skillet, heat the ½ tablespoon cooking oil over medium heat and saute the ½ cup yellow onion until tender, fragrant, and translucent, or about 4-5 minutes. Add the 1 teaspoon garlic and 1 tablespoon chicken taco seasoning, mix, and saute for an additional 30 seconds.
- Mix in the ½ cup ½ cup salsa roja (or your favorite brand of salsa) until warmed through. Stir in the shredded chicken until evenly coated, then cook on low for 2-3 more minutes.
- Serve immediately with warmed tortillas or taco shells and your favorite toppings.
Notes
- Skip step 1 by using my Instant Pot shredded chicken, the perfect easy way to make tacos!
- You can use frozen chicken for this recipe. It will need to simmer for longer, so be sure to check the internal temperature of the chicken has reached 165°F (74°C) before you shred it.
- Leftover shredded chicken should be kept in an airtight container. It can be refrigerated for 3 days or frozen for 3 months. Reheat leftovers over medium heat on the stovetop with a splash of chicken stock or extra salsa to keep it from drying out.
