Easy Chicken Burrito Bowl Recipe
Whether you're looking for an easy lunch or dinner option, a chicken burrito bowl will definitely satisfy your craving. They are easy to make and can easily be customized to suit everyone's tastes.
The base of the bowl is made up of cilantro lime rice, black beans, corn, and succulent taco-seasoned chicken; then I like to add mango salsa, avocado slices, sour cream, and cheese to make it even more delicious! It is a great way to get the whole family together for a tasty meal everyone loves!

🥘 Chicken Burrito Bowl Ingredients
The great thing about burrito bowls is that they are easy to customize. I love the combination of flavors from these toppings, but you can easily swap the cheese, salsa, rice, or beans for your favorite types.
- Chicken Breast - 1 pound of chicken breast sliced into strips.
- Olive Oil - 2 tablespoons of extra virgin olive oil (divided into two 1-tablespoon portions).
- Taco Seasoning - 1 tablespoon of taco seasoning mix (or fajita seasoning).
- Cilantro Lime Rice - 4 cups of cilantro lime rice. Check out my recipe, or you can always use your preferred type of rice.
- Black Beans - 3 cups of black beans. If using canned, be sure to drain them.
- Corn - 3 cups corn (fresh, thawed, or canned).
- Cheese -1 cup of shredded Mexican cheese blend, or your preferred cheese.
- Mango Salsa - ½ cup of mango salsa (or your favorite salsa/pico de Gallo).
- Avocado - 1 large avocado (diced).
- Sour Cream - ¼ cup of sour cream (for serving).
- Cilantro - ¼ cup of chopped fresh cilantro for garnish.

🔪 How To Make A Chicken Burrito Bowl
Once you cook the chicken, all you have to do is build your bowl and dig in! To get started, you will need measuring utensils, a mixing bowl, a skillet, and some kitchen tongs.
This recipe makes 4 hearty burrito bowls!
- Season. Add 1 pound of chicken breast strips to a mixing bowl with 1 tablespoon of olive oil and toss to coat. Then, season them generously with 1 tablespoon of taco or fajita seasoning and toss once more until the meat is well coated.
- Cook the chicken. Add 1 tablespoon of olive oil to a large skillet over medium-high heat. Once hot, add the chicken strips and cook until no pink remains, flipping strips as needed. Set aside.
- Assemble the bowls. Divide the 4 cups of cilantro lime rice evenly into 4 separate bowls. Top each bowl with an equal portion of 3 cups of black beans, 3 cups of corn, 1 cup of shredded Mexican cheese, 1 diced avocado, ½ cup of mango salsa, and ¼ cup of sour cream.
- Garnish and serve. Garnish each bowl with ¼ cup freshly chopped parsley and serve immediately.
These chicken burrito bowls are a full meal, so you don't need any sides. They're also an exceptionally tasty meal for meal prepping for the week!

- Burrito bowls are easily customizable! Add your favorite burrito mix-ins like queso fresco, shredded iceberg lettuce, salsa roja, salsa verde, sauteed onions, pico de Gallo, or your favorite hot sauce!
- I like to use fresh mango salsa in my burrito bowls, but you can use any variety of salsa or try my fresh pineapple salsa!
- In place of fajita seasoning or taco seasoning, you could also marinate your chicken in fajita chicken marinade, cilantro lime chicken marinade, or chipotle chicken marinade!

It depends on who you ask! At its base, a chicken burrito bowl will typically consist of white rice, seasoned pieces of chicken, and oftentimes, beans. After that, all the toppings and sauces are totally up to you!
If you're trying to cut the carbs or just looking for something new, there are a few alternatives to using rice in a burrito bowl. Cauliflower rice is my favorite, but you could also opt for shredded lettuce or mixed greens for more of a 'salad' approach.
Quinoa, pasta, farro, or zucchini noodles are also delicious!
You sure can! I prefer to warm the rice, beans, and chicken in the microwave before eating a leftover burrito bowl, but you can enjoy it cold if you're ok with that. It's just like eating a cold burrito!
