❄️ Safely Freezing, Thawing, and Reheating Your Leftovers
If you intend to save your leftovers to reheat or make new meals later, you should probably freeze them. Most refrigerated leftovers must be eaten or frozen within 3-4 days, with some exceptions.

💭 Tips For Making The Most Of Your Leftovers
- Freeze and reheat your leftovers properly. Following the guidelines above is key to the best results when taking your leftovers out of the fridge or freezer.
- Don't cry over dry or overcooked meat. You can make delicious soups or stews with your leftover meat if it has become tough or dry, or if you overcooked it the first go around. This works well for steaks, beef roasts, chicken, turkey, you name it.
- Simple ideas. You can make a new, tasty meal with leftover ingredients without having to cook an entirely new recipe. Use leftover beef for quick sandwiches or as an easy baked potato topping. Leftover turkey or chicken are great shredded on salads.
- Save the undesirables. If you make a roast, the bones, fat, and drippings can be repurposed into delectable homemade stock, broth, gravy, or au jus. Save your lobster shells to make my easy lobster stock recipe.

Leftover Recipes For Making The Most Of Your Meals
Ingredients
- 1 tablespoon butter (or extra virgin olive oil)
- 1 cup yellow onion (diced, or use white onion)
- 1 teaspoon each, salt & pepper (to taste)
- ½ teaspoon garlic powder
- 2 cups beef broth
- 3 tablespoon cornstarch
- 1 teaspoon Worcestershire sauce
- 2 cups frozen vegetable mix (12 ounces)
- 1 lb prime rib roast (cooked leftover prime rib, chopped)
- 1 butter pie crust
- 2 cups mashed potatoes (leftovers, or use Instant mashed potatoes)
Instructions
- Preheat your oven to 350°F (175°C/Gas Mark 4) and move your baking rack down to the second rack from the bottom.
- In a large skillet over medium heat, melt 1 tablespoon butter and saute the 1 cup yellow onion until tender. Add the 1 teaspoon each, salt & pepper, and ½ teaspoon garlic powder. Stir to combine.
- In a small mixing bowl or your liquid measuring cup, dissolve the 3 tablespoon cornstarch into the 2 cups beef broth. Pour the mixture into the skillet with onions and add 1 teaspoon Worcestershire sauce, 2 cups frozen vegetable mix, and leftover 1 lb prime rib roast meat, and then mix until smooth.
- Bring the gravy with vegetables and beef to a simmer, then remove from heat and allow to thicken and cool slightly before transferring it into your pie crust.
- Place the 1 butter pie crust into your 9-inch pie pan and poke holes with a fork throughout the bottom of the crust. Pour the pot pie filling into the crust and gently smooth it into one layer.
- Bake the pot pie on the lower rack at 350°F (175°C/Gas Mark 4) for 15 minutes. Take the pot pie out and add 2 cups mashed potatoes on top in a smooth layer. Place the pie back in the oven and bake for another 12-15 minutes.
- Once the pie is done, take it out of the oven and allow it to cool for 5-10 minutes before serving.
Notes
- 2 cups of frozen vegetables weighs around 12 ounces and 3 cups of cooked prime rib will be around 1 pound.
- You could easily swap the frozen veggie mix out for your favorite variety of frozen vegetables, like frozen peas and carrots, or frozen corn.
- Baking pot pies on a lower shelf as suggested is what cooks the bottom crust!
- To Store: Place your leftover prime rib pot pie in an airtight container or wrap it tightly in foil and refrigerate it for up to 3 days.
- To Freeze: Baked or unbaked pot pies can be frozen for up to 3 months. For long-term storage, flash freeze the pie on a baking sheet until fully frozen, then wrap it tightly in heavy-duty aluminum foil.
- To Reheat: Thaw the pot pie in the fridge overnight, then cover it with foil. Bake at 350 (175°C) for 15-25 minutes or until heated through. You can also microwave individual slices.
