    After you have cooked a nice, juicy prime rib, you can turn your leftovers into a hearty and comforting pot pie! This pot pie is made with a flaky homemade pie crust filled with chunks of leftover prime rib roast, frozen mixed vegetables, and gravy, then topped with a layer of mashed potatoes.

    When you mix all of these ingredients together, you have a satisfying dinner the whole family will love! It's the perfect way to repurpose all your extra holiday roast.

    🥘 Leftover Prime Rib Pot Pie Ingredients

    You can always cook up some prime rib, mashed potatoes, and gravy to make this recipe, but it's always great to use up leftovers! This is perfect to make after a holiday meal when you need an easy family dinner to prepare.

    • Butter - 1 tablespoon of butter (or extra virgin olive oil).
    • Yellow Onion - 1 cup of yellow or white onion (diced).
    • Salt & Pepper - 1 teaspoon of each, salt & pepper (to taste).
    • Garlic Powder - ½ teaspoon of garlic powder.
    • Beef Broth - 2 cups of beef broth.
    • Cornstarch - 3 tablespoons of cornstarch for making gravy.
    • Worcestershire Sauce - 1 teaspoon of Worcestershire sauce.
    • Frozen Vegetable Mix - 2 cups frozen vegetable mix (12 ounces). Peas, carrots, corn, green beans, or any mix of those will work.
    • Prime Rib Roast - 1 pound of cooked prime rib roast chopped or diced.
    • Butter Pie Crust - 1 butter pie crust, see my recipe or use store bought if desired.
    • Mashed Potatoes - 2 cups of cooked mashed potatoes (use leftovers, see recipe, or use store-bought).

    🔪 How To Make Leftover Prime Rib Pot Pie

    By using leftover prime rib, the prep time is cut down a lot! Take out a saucepan, silicone whisk, mixing bowl, and a 9-inch pie pan to begin!

    This pot pie recipe will yield about 4 hearty servings. You can easily double this recipe if you need to serve a larger crowd.

    Prepare Pot Pie Filling

    1. Prep. Preheat your oven to 350°F (175°C) and move your baking rack down to the second rack from the bottom.
    2. Saute onion. In a large skillet over medium heat, melt the 1 tablespoon of butter and saute the 1 cup of yellow onion until tender. Add 1 teaspoon salt, 1 teaspoon pepper, and ½ teaspoon garlic powder. Stir to combine.
    3. Add ingredients. In a small mixing bowl or your liquid measuring cup, dissolve the 3 tablespoons of cornstarch into the 2 cups of beef broth. Pour the mixture into the skillet with onions and add 1 teaspoon of Worcestershire sauce, 2 cups of frozen vegetables, and 1 pound of leftover prime rib roast meat, and then mix until smooth.
    4. Simmer. Bring the gravy with vegetables and beef to a simmer, then remove from heat and allow to thicken and cool slightly before transferring it into your pie crust.

    1. Fill the pie crust. Place the butter pie crust into your 9-in pie pan and poke holes with a fork throughout the bottom of the crust. Pour the pot pie filling into the crust and gently smooth it into one layer.
    2. Bake pot pie. Bake the pot pie on the lower rack at 350°F (175°C) for 15 minutes. Take the pot pie out and add 2 cups of mashed potatoes on top in a smooth layer. Place the pie back into the oven and bake for another 12-15 minutes.
    3. Cool and serve. Once the pie is done, take it out of the oven and allow it to cool for 5-10 minutes before serving.

    Prime rib pot pie is a tasty main course meal on its own. However, you can't go wrong serving up some buttery rolls to soak up any extra gravy! Also, anything you can serve with a chicken pot pie would be great with this pot pie too! Enjoy!

    • 2 cups of frozen vegetables weigh around 12 ounces and 3 cups of cooked prime rib will be around 1 pound.
    • You could easily swap the frozen veggie mix out for your favorite variety of frozen vegetables, like frozen peas and carrots, or frozen corn.
    • Baking pot pies on a lower shelf as suggested is what cooks the bottom crust!

    🥡 Storing & Reheating

    Place your leftover prime rib pot pie in an airtight container or wrap it tightly in foil and refrigerate it for up to 3 days.

    Baked or unbaked pot pies can be frozen for up to 3 months. For long-term storage, you should flash freeze the pie on a baking sheet until fully frozen, then wrap it tightly in heavy-duty aluminum foil.

    Reheating Leftover Prime Rib Pot Pie

    Thaw the pot pie in the fridge overnight, then cover it with foil. Bake at 350 (175°C) for 15-25 minutes or until heated through. You can also microwave individual slices.

    Can I Make Prime Rib Pot Pie Without Mashed Potatoes?

    Yes! You can use a double-crust pie crust or top off your pot pie with Pillsbury Grands Biscuits. Also, some crescent rolls would be great too! Any way you pick, this pot pie will be delicious no matter what!

    Can I Make Prime Rib Pot Pie In Advance?

    Absolutely! You can make the filling up to 24 hours in advance from when you want to bake the pot pie. You may need to add up to 5-10 more minutes to the cooking time since the filling will be cold. You can also assemble the whole pot pie and freeze it for up to 3 months. Make sure to thaw the pie in the fridge overnight before baking.

    Does Prime Rib Pot Pie Have A Top Crust?

    This one does not, instead, it has a layer of mashed potatoes on top! So if you have a prime rib holiday dinner with mashed potatoes, this is the ultimate recipe to make the day after!

    Ingredients
     

    • 1 tablespoon butter (or extra virgin olive oil)
    • 1 cup yellow onion (diced, or use white onion)
    • 1 teaspoon each, salt & pepper (to taste)
    • ½ teaspoon garlic powder
    • 2 cups beef broth
    • 3 tablespoon cornstarch
    • 1 teaspoon Worcestershire sauce
    • 2 cups frozen vegetable mix (12 ounces)
    • 1 lb prime rib roast (cooked leftover prime rib, chopped)
    • 1 butter pie crust
    • 2 cups mashed potatoes (see recipe, or use store bought)

    Instructions

    • Preheat your oven to 350°F (175°C) and move your baking rack down to the second rack from the bottom.
    • In a large skillet over medium heat, melt the butter and saute the onions until tender. Add the salt, pepper, and garlic powder. Stir to combine.

    • In a small mixing bowl or your liquid measuring cup, dissolve the cornstarch into the beef broth. Pour the mixture into the skillet with onions and add Worcestershire sauce, frozen vegetables, and leftover prime rib roast meat, and then mix until smooth.
