These crazy delicious potatoes are, in my opinion, one of the best potato side dishes to serve with prime rib. They are elevated in appearance, texture, and flavor for the most perfect potatoes ever.
Fondant potatoes are crisped on both ends before adding broth and baking so that the inside is absolutely tender, creamy, and infused with the delicious broth flavor. Serve them with their own reduced broth, or some prime rib au jus!
2. Twice-Baked Potatoes
This classic potato dish is so wonderful as part of any meal! The baked potato exterior has a nice crispy baked skin with a super creamy, cheesy filling.
The best part of these potatoes? They can be made in advance! Holiday meals are certainly the perfect time to incorporate some make-ahead dishes!
Stuff your potato skins with your favorite fillings like sour cream, cream cheese, cheddar, swiss, gruyere, or Colby cheese plus bacon, chives, broccoli, mushrooms, or whatever your family loves! Heat your ready-to-bake twice-baked potatoes in the oven while your prime rib is resting, and they will be done just in time to serve and enjoy!
3. Roasted Broccoli with Garlic & Parmesan
Have you ever tried roasting your vegetables? I love that it brings a different flavor profile out in your veggies and this roasted broccoli is no exception!
Roast this delicious vegetable side until the broccoli florets are nice and crispy, then top them with some parmesan. Of course, add more parmesan when serving since parmesan cheese is made for pairing with the distinctive spiced flavor of cabernet sauvignon!

This perfectly balanced horseradish sauce is not only superb when served with your prime rib dinner, but it also deserves to be saved for serving with any prime rib leftovers ( and slathered on some prime rib sandwiches )!
6. Red Wine Au Jus
My au jus that is made especially for prime rib includes the rich, beefy prime rib drippings with the most perfect wine pairing for a prime rib that there is! Cabernet sauvignon is my first choice pick for serving with prime rib or ribeye steaks!
Other great wine pairings for prime rib include any Cabernet wine, Syrah, Petit Sirah, Pinot Noir, Merlot, or Zinfandel. Although with the accompaniment of horseradish you can disregard some of the traditional wine pairings!
If I wasn't using my wine for the au jus, which is why it's also called a cabernet jus, I would sit down with a tall glass of Riesling. Totally ready for dessert too with that wine pick!
7. Garlic Green Beans
Super easy to make pan-fried garlic green beans can be made on the stovetop while your oven is warming more sides and bread! Just the right amount of flavorful garlic makes these tender green beans a delight!
Top off this easy vegetable side dish with bacon and you have a perfect side for your holiday meal!
8. Roasted Brussel Sprouts with Bacon & Dijon Mustard

What to Serve With Prime Rib: Green Salad (+ All the Best Sides!)
Ingredients
- 1 tablespoon shallot (finely minced)
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 teaspoon honey
- â…“ cup olive oil (extra virgin)
- each, salt & pepper (to taste)
- 1 head butter lettuce (aka Boston or bibb lettuce)
- 1 heart romaine lettuce
Instructions
- In a small bowl, mix the shallot, Dijon mustard, lemon juice, honey, salt, and pepper until well combined. Whisk in the olive oil.
- Toss with hand torn butter lettuce and romaine heart, then serve.
