Prime rib is one of my favorite protein choices, which is why it is typically reserved for special occasions! I always prepare extra around the holidays to enjoy the leftovers in many of my original recipes!
While typical grilled cheese sandwiches feature sandwich bread and some American singles, this version likes to kick everything up a notch.
🥘 Ingredients
- Sourdough - Sourdough bread or your preferred variety of good toasting bread.
- Butter - Butter that is softened at room temperature. Set it out 30 minutes beforehand to soften up. Alternatively, try mayo for toasting!
- Leftover Prime Rib Roast - Leftover prime rib roast, sliced into thin strips.
- American Cheese - Sliced American cheese or your favorite cheese.
- Sharp Cheddar Cheese - Freshly grated sharp cheddar cheese melts the best!
- Salt & Pepper - Salt and pepper to taste.

🔪 How To Make Prime Rib Grilled Cheese Sandwiches
This extravagant sandwich is as easy to make as any basic grilled cheese since the prime rib is already cooked! You will need a large skillet, a spatula, and a cheese grater.
This recipe is for two grilled cheese sandwiches. I recommend only preparing as much as you can eat, as the leftovers don't store well.
Prep & Assemble The Sandwiches
Step 1: Prep & preheat. Place a large skillet over medium heat and butter both sides of your 4 slices sourdough using 2 tablespoons of softened butter. Once the skillet is hot, place the bread into the pan and toast one side. Remove the bread from the skillet.
Step 2: Stack the sandwiches. With the toasted side of the bread facing up, layer two of your pieces of bread with 1 pound (453.59 grams) leftover prime rib roast, 2-4 ounces (56.7 grams) American cheese, 1-2 ounces (28.35 grams) sharp cheddar cheese, and salt & pepper (to taste). Place the remaining bread slices on top with the buttered side facing out.
Toast & Serve
Step 3: Pan-fry until golden. Place the assembled sandwiches back into the skillet and cook until the bottom bread is golden. Flip and toast the second side of the sandwich. *Reduce the heat if the bread is browning too quickly before the cheese melts.
Step 4: Serve and enjoy. Remove both sandwiches from the skillet, slice in half, and serve immediately.
💭 Tips & Notes
- Don't make a mess! Use sturdy bread that can hold up to the filling. Sourdough, ciabatta, or rustic bread are great choices.
- Boost the flavor. Consider adding a layer of condiments. Horseradish sauce, Dijon mustard, or garlic aioli will take it to the next level.
- Load up your sandwiches. You can customize the fillings of your sandwich however you like! Caramelized onions or sauteed mushrooms would taste amazing!
- Storing notes: Grilled cheese sandwiches are best when enjoyed immediately. Try to prepare only as much as you will eat in one sitting.
