Quick & Easy Beef Stir Fry
Dishing up some tasty leftovers is something I have a knack for and that I'm always happy to share! This easy beef stir fry uses sliced prime rib, but you can swap that out for your cooked roasts or steak leftovers if that's what you have!
Best of all, you can have this budget-friendly dinner on the table in about 20 minutes!
🥘 Ingredients
- Cornstarch - or a cornstarch substitute. Divided into two portions.
- Water - for the slurry and adding to the sauce.
- Prime Rib Roast - sliced into 2-3 inch bite-sized strips.
- Soy Sauce - or a soy sauce substitute. Opt for reduced-sodium soy sauce if you have it on hand.
- Oyster Sauce - or use an oyster sauce substitute.
- Minced Garlic - Fresh garlic is best, but canned minced garlic is convenient.
- Diced Ginger - or a ginger substitute. The ginger paste in a tube in the grocery store's produce department works, too.
- Granulated White Sugar - add more if you like your sauces sweeter. Or try light brown sugar.
- Sesame Seed Oil - or toasted sesame seed oil.
- Cooking Oil - for frying. I opted for beef tallow.
- Broccoli - use fresh broccoli for the best results.

🔪 How To Make Leftover Prime Rib Beef & Broccoli
Break out your wok and grab a chef's knife! You'll need some measuring utensils, bowls, a whisk, and a spatula to fry up this dish.
This stir fry yields about 4 servings, but you can easily scale it up to serve a bigger crowd.
Marinate The Beef
Step 1: Make the slurry and add beef. Mix the 2 tablespoon portion of 3 tablespoon cornstarch with an equal 2 tablespoons of cold water. Add the sliced 1-1½ pounds (453.59 grams) prime rib roast pieces and toss until well coated. Set aside.
Make The Beef Broccoli Sauce
Step 2: Mix and set aside. Combine the sauce ingredients: ½ cup (118.29 milliliters) water, ⅓ cup (78.86 milliliters) soy sauce, ¼ cup (59.15 milliliters) oyster sauce, 1 tablespoon ginger, 1 tablespoon granulated sugar, ½ tablespoon minced garlic, 1 teaspoon sesame seed oil, and the remaining 1 tablespoon of cornstarch in a small mixing bowl. Set aside.
Wok Fry The Beef & Broccoli
Step 3: Heat the wok. Melt the 2 tablespoons beef tallow in your wok over medium-high heat. Once sizzling, add the marinated beef strips.
Step 4: Fry the beef. Stir fry for 2-3 minutes until the beef is browned, but some medium-rare pink color remains.
*See notes: If your broccoli is pre-cooked, your finishing time will be just minutes.
Step 5: Cook the broccoli. Add the chopped 1 pound (453.59 grams) broccoli florets and stir fry with the beef until tender-crisp, about 3 minutes.
Add Sauce, Cook, Then Serve
Step 6: Add sauce. Whisk the sauce to combine, then pour over your stir fry. Mix and continue cooking for 2-3 minutes until the sauce thickens.
Step 7: Dish it up. Serve immediately over rice or fried noodles and garnish with sliced green onions and sesame seeds if desired.
🍽️ What To Serve With Beef & Broccoli
Obviously, when it comes to sides, I will suggest one of my other leftover dishes to round out your meal! You're sure to enjoy prime rib fried rice (also using leftovers).

💭 Angela's Pro Tips & Notes
- Prep the beef. Slice your leftover prime rib (or roast beef, or steak) into even-sized pieces so that they cook quickly and evenly.
- Use fresh broccoli. The texture and flavor will both be better!
- Make it quick. Put the chopped broccoli florets into a microwave-safe dish with 2 tablespoons of water to cook this dish quickly. Cover and steam on high heat for 4-5 minutes to pre-cook the broccoli.
- Keep it hot. You'll want to cook on the upper end of medium-high and adjust your heat up to high if needed to stir fry the dish in a really hot wok or skillet.
- Adjust your sauce consistency. Add a bit more cornstarch (make a slurry with an equal amount of cold water) to thicken as needed, or a bit of water or broth to thin as desired.

🥡 Storing & Reheating
Allow leftovers to cool completely, then transfer into an airtight storage container. Keep refrigerated for up to 3-4 days.
Freezing
Freeze leftover beef and broccoli in a shallow, airtight freezer storage container or freezer bag. Use within 3-4 months at most. Thaw in the fridge overnight before reheating.
Reheating
Reheat single servings in the microwave on high power for 1 minute, stir and continue heating in 30-second intervals until warm.
For larger portions, heat a skillet with oil over medium-high heat. Fry until heated to your satisfaction.

- 2 tablespoon beef tallow (or a neutral-flavored cooking oil)
- 1 lb broccoli florets (5-6 cups or 1 to 1½ crowns rinsed and chopped broccoli)
