This tasty Caprese flatbread is one of my go-to lunch recipes right now because it is so easy to make and packed with tons of flavor! I'm all about the abundance of fresh tomatoes, basil, and mozzarella that I don't even miss not having meat!

🔪 How To Make Caprese Flatbread

If you already have your flatbreads made and ready to go (or packaged from the store) then this recipe will come together in just about 15 minutes! All you will need is a baking sheet, a basting brush, and a spoon!

This recipe is for 2 flatbread pizzas, which is about 8 servings!

  1. Preheat. Preheat your oven to 500°F (260°C) and line a baking sheet with parchment paper.
  2. Brush. Place 2 flatbreads onto the prepared baking sheet and brush them with 2 tablespoons of olive oil, making sure to cover the entire surface all the way out to the edges.
  3. Assemble. Spread ½ cup of pesto over the top of the flatbreads in an even layer. Then, place 8 ounces of fresh mozzarella slices over the top followed by the halved 1 cup of grape tomatoes.
  4. Bake. Bake in the preheated oven at 500°F (260°C) for 10-15 minutes or until the cheese is melted and the edges have browned. If desired, you can broil the pizza for 1-2 minutes to brown the cheese.
  5. Top and serve. Remove the flatbreads from the oven and drizzle them with ¼ cup of balsamic glaze, garnish with 1 handful of sliced fresh basil, and the optional grated ¼ cup of Parmesan cheese. Serve immediately.

Serve your Caprese flatbread alongside some baked chicken wings and a Greek pasta salad for a super hearty and satisfying meal! Take a look at my post on what to serve with pizza for some more tasty ideas and recipes! Enjoy!

💭 Angela's Pro Tips & Recipe Notes

  • My homemade flatbread comes together in a snap and is ultra tasty! However, you can also make this yummy pizza using store-bought flatbreads. You could even make it using pizza dough!
  • You can use either a balsamic reduction or a balsamic glaze. They are very similar, and both are super easy to make! A balsamic reduction is just reduced balsamic vinegar, while the glaze has an added sweetener.
  • I used halved grape tomatoes for my caprese flatbread, but feel free to use your favorite tomato variety! Small heirloom tomatoes would be a great choice as well!

🥡 Storing & Reheating

This flatbread is really best enjoyed fresh. However, you can keep your leftovers stored in an airtight container in the fridge for a few days if needed.

Reheating Caprese Flatbread

Reheat your pizza on a baking sheet in the oven until it is heated to your liking. Check out my post on how to reheat pizza for more information.
