Rainbow Rice Krispies Treats Recipe
My Rice Krispies treats in rainbow colors are easy to make, just like your favorite version! A few more steps to add the layers is all it takes.
It's super easy to color these layers, and the microwave method makes it almost as fast as a normal batch of Rice Krispies treats made using the stove top method! I suggest gathering your ingredients and dividing out the six portions in advance to save time during the assembly process.
There's a few optional ingredients included in notes below. You can add vanilla extract at the time when you're adding the food coloring. It enhances the marshmallow flavor and makes these gooey treats even better!
The rainbow sprinkles are totally optional, but something that my daughter likes to add when we make these. They sprinkled version has been a hit at many school classroom parties!!
To Make Your Rainbow Rice Krispies Treats
- Generously butter your 9 x 13 baking pan. Portion your first layer's worth (2 cups) of Rice Krispies into a bowl. Portion out additional amounts of the Rice Krispies into other bowls to make the process move quicker.
- Divide your 15 oz of marshmallows into 6 portions (or however many color layers are desired). Place the first portion in a medium mixing bowl and add the first 1 ½ tablespoon of butter.
- Microwave marshmallow and butter combination for 1 minute (depending on your microwave, you may need an additional 30 second heating, but if your marshmallows are nice and fluffy they should be ready to mix. A few semi-solid spots in the marshmallows is OK).
- Stir the heated marshmallows, add your desired food gel color, then stir in the 2 cup portion of Rice Krispies until well coated. *A ½ teaspoon of vanilla extract can be added for each layer, if desired.
- You can wet your fingers, butter them, or use a buttered spatula, and press each layer down firmly and evenly and into the corners of the baking dish. Clean your medium mixing bowl and repeat for each layer.
- (Optional) Rainbow sprinkles can be added on top.
*Typically I would advise against pressing your Rice Krispies treats into the pan too firmly. However, to spread the layers evenly and keep them fitted together nicely, you will need to press them in more firmly.
