🔪 How To Make Microwave Baked Sweet Potatoes
The key is to ensure that you pierce several spots in the potato to release steam before microwaving. You will only need a chef's knife and microwave for this easy recipe!
There will only be 1 serving, but you can easily duplicate to make enough for the whole family!
- Prep. To prepare your 1 medium sweet potato, make sure to wash it and dry it thoroughly. Then, use a fork to pierce several places on the potato.
- Microwave. Place your sweet potato on a paper towel-lined plate and put it in the microwave. Heat it on high for 3 minutes, then rotate it to the other side and heat for another 2 minutes (*see note).
- Rest. Carefully remove the sweet potato from the microwave (it will be hot!) Allow it to rest for 2 minutes.
- Slice and serve with butter. Slice down the middle and serve with a pat of butter, if desired.
Sweet potatoes can be a delicious light lunch or a great snack on their own. If you are looking for a balanced meal to make for the family, try serving microwave sweet potatoes with pan-seared salmon, and roasted vegetable medley! Enjoy!
