Everyone loves to enjoy these sweet and fragrant carrots with a pile of turkey and gravy, but they are equally delicious anytime. They are an easy vegetable side dish that makes a welcome addition to any dinner plate.

There are plenty of fresh herbs added to these roasted honey glazed carrots. Plus, a touch of brown sugar, along with the honey, will add a slightly crispy coating to this sticky honey deliciousness!

Be sure to check out my post for vegetable side dishes for more ideas.

🥘 Ingredients

You'll be shocked how a handful of simple ingredients can turn into such a delicious dish! Warm the honey by pouring it into a microwave-safe dish and microwaving it for 20-30 seconds.

  • Carrots - 2 pounds, cleaned and sliced on the diagonal.
  • Honey - 3 tablespoons, warmed.
  • Light Brown Sugar - 1 tablespoon.
  • Butter - 2 tablespoons, softened at room temperature.
  • Fresh Thyme - 2 teaspoons.
  • Fresh Rosemary - 2 teaspoons.
  • Salt & Pepper - ½ teaspoon each.

Be sure to see the free printable recipe card below for ingredients, exact amounts & instructions with tips!

🔪 How To Make Honey Glazed Carrots

These honey glazed carrots are surprisingly simple. All you need is a knife and cutting board, a mixing bowl, and a baking dish!

This recipe makes 6 servings so you can feed the whole family. If you need extra for the holidays just scale the recipe up as needed and use an extra baking dish.

  1. Prep. Preheat your oven to 425°F (220°C) and generously coat your baking dish (or baking sheet) with the softened butter (*see note).
  2. Toss. In a medium mixing bowl, toss 2 pounds of sliced carrots with 3 tablespoons of warmed honey, 1 tablespoon brown sugar, fresh herbs (2 teaspoons each of thyme and rosemary), and ½ a teaspoon of both salt & pepper. Transfer to your baking dish and spread in an even layer.
  3. Bake. Bake at 425°F (220°C) for 20-25 minutes, opening the oven to stir the carrots twice during the cooking time so they roast evenly. Roasted carrots should be slightly browned around the edges, and can easily be pierced with a fork. Remove from the oven and serve immediately.

If you're cooking for the holidays you can't go wrong serving these honey glazed carrots with a glazed honey ham or oven roasted turkey. They would also be delicious next to grilled pork steaks or a London broil.

💭 Angela's Pro Tips & Recipe Notes

  • Be sure to butter the baking dish very generously to prevent sticking and add to the flavor.
  • If you like your carrots extra soft, continue to oven roast until they have reached your desired level of tenderness.
  • If using a baking sheet, the carrots will be spread in a thinner layer and be roasted fully in a shorter amount of time, so adjust your cooking time as needed.
  • To store: Store leftover honey glazed carrots in an airtight container in the fridge for up to 4 days.
  • To reheat: Reheat individual portions in the microwave or cover the baking dish with foil and place it in an oven at 350°F (175°C) for 10-15 minutes.

I use any of my casserole dishes that will fit the carrots in an even layer, and you can even use a baking sheet. Whatever works best for you, enjoy!
