You'll be shocked how a handful of simple ingredients can turn into such a delicious dish! Warm the honey by pouring it into a microwave-safe dish and microwaving it for 20-30 seconds.
- Carrots - 2 pounds, cleaned and sliced on the diagonal.
- Honey - 3 tablespoons, warmed.
- Light Brown Sugar - 1 tablespoon.
- Butter - 2 tablespoons, softened at room temperature.
- Fresh Thyme - 2 teaspoons.
- Fresh Rosemary - 2 teaspoons.
- Salt & Pepper - ½ teaspoon each.

🔪 How To Make Honey Glazed Carrots
These honey glazed carrots are surprisingly simple. All you need is a knife and cutting board, a mixing bowl, and a baking dish!
This recipe makes 6 servings so you can feed the whole family. If you need extra for the holidays just scale the recipe up as needed and use an extra baking dish.
- Prep. Preheat your oven to 425°F (220°C) and generously coat your baking dish (or baking sheet) with the softened butter (*see note).
- Toss. In a medium mixing bowl, toss 2 pounds of sliced carrots with 3 tablespoons of warmed honey, 1 tablespoon brown sugar, fresh herbs (2 teaspoons each of thyme and rosemary), and ½ a teaspoon of both salt & pepper. Transfer to your baking dish and spread in an even layer.
- Bake. Bake at 425°F (220°C) for 20-25 minutes, opening the oven to stir the carrots twice during the cooking time so they roast evenly. Roasted carrots should be slightly browned around the edges, and can easily be pierced with a fork. Remove from the oven and serve immediately.
If you're cooking for the holidays you can't go wrong serving these honey glazed carrots with a glazed honey ham or oven roasted turkey. They would also be delicious next to grilled pork steaks or a London broil.

- Be sure to butter the baking dish very generously to prevent sticking and add to the flavor.
- If you like your carrots extra soft, continue to oven roast until they have reached your desired level of tenderness.
- If using a baking sheet, the carrots will be spread in a thinner layer and be roasted fully in a shorter amount of time, so adjust your cooking time as needed.
- To store: Store leftover honey glazed carrots in an airtight container in the fridge for up to 4 days.
- To reheat: Reheat individual portions in the microwave or cover the baking dish with foil and place it in an oven at 350°F (175°C) for 10-15 minutes.

This is a personal preference. I often don't peel mine! If you prefer to peel yours it won't affect the cooking time.

Honey Glazed Carrots
Ingredients
- 2 lbs carrots (cleaned and sliced on the diagonal)
- 3 tablespoon honey (warmed)
- 1 tablespoon light brown sugar

Instructions
- Preheat your oven to 425°F (220°C) and generously coat your baking dish (or baking sheet) with the softened butter.
- In a medium mixing bowl, toss the sliced carrots with the warmed honey, brown sugar, fresh herbs (thyme and rosemary), and salt & pepper. Transfer to your baking dish and spread evenly in the dish.
- Bake at 425°F (220°C) for 20-25 minutes, stirring the carrots twice during the cooking time to roast the carrots evenly. Roasted carrots should have slightly browned edges, and will be tender when forked.
- Remove from the oven and serve immediately.
