🔪 How To Make Chocolate Frosted Baked Donuts
Baking donuts is so much easier than frying them! You just need a donut pan, mixing bowl, and measuring cups.
This recipe will make 18 donuts or about 4 times as many mini-donuts!
- Prep. Preheat your oven to 425°F (218°C) and lightly grease your donut pans or mini-donut pans.
- Cream. Cream together ¼ cup softened butter, ¼ cup cooking oil, ½ cup sugar, and ⅓ cup brown sugar in a medium mixing bowl. Then mix in the 2 large beaten eggs, 2 teaspoons baking powder, 1 ½ teaspoons of vanilla, and ¾ teaspoon of salt just until combined.
- Mix in milk and flour. Alternate between pouring small amounts of all-purpose flour and milk into the wet ingredients until all 2 ⅔ cups of flour and 1 cup of milk have been added. Mix until evenly distributed, but be careful not to overmix.
- Add batter to mold. Transfer the batter (*see note) into the greased donut pan(s). Each donut mold should be roughly ⅔ full so they have room to rise.
- Bake. Place your donuts on the middle of the center rack in your oven and bake for 8-10 minutes, or until they have risen and the edges become light golden-brown.
- Cool. Pull your donut pan from the oven and let the donuts sit for 5 minutes in the pan before you transfer them to a wire cooling rack to cool completely.
Frost The Donuts
- Combine frosting ingredients. Once the donuts have cooled, combine the 1 cup of semi-sweet chocolate chip morsels and 1 teaspoon of coconut oil in a microwave-safe bowl.
- Microwave. Melt in the microwave in 15-30 second increments at medium or high power, stirring between each heating until smooth. *Medium power is best to prevent burning your chocolate.
- Frost. Dip each doughnut, top side facing downward, into the chocolate frosting, then return them to the cooling rack to set.
These chocolate frosted donuts make a great, easy breakfast by themselves. However, for a well-rounded morning meal in a flash, try serving them with a quick microwave omelet or microwave scrambled eggs. Enjoy!
💭 Angela's Pro Tips & Notes
- After the wet and dry ingredients have been combined, mix gently just until everything is well-distributed. If you overmix the batter, your donuts will be tough!
- Rather than pouring the batter, it is much easier to spoon it into the donut pan. Alternatively, you may use a piping bag or plastic storage bag with the corner snipped off to pipe it into the molds.
- It is easy to dry out baked donuts. Use a toothpick inserted into the thickest part of the donut to test its doneness. Ideally, a few moist crumbs will be stuck to the toothpick.
- The chocolate icing can be reheated as needed to make the icing smooth enough to finish icing the remaining donuts.
🥡 Storing
Store your baked donuts in a Ziploc bag or an airtight container for up to 48 hours.
The donuts can be frozen for up to 6 months (without frosting) by placing them in a heavy-duty freezer bag with the air removed. Thaw in the microwave on 50% power and frost as directed.
❓ Recipe FAQs
Yes, you can freeze baked donuts. Just be sure to do so before adding any frosting or icing. They will keep frozen for up to 6 months, then you can simply pop them in the microwave at 50% power to thaw them out!
Not exactly. Baked donuts are slightly denser. If you have tried cake donuts at your local donut shop vs their regular fried donuts, it's the same thing.
At room temperature in an airtight container, your baked donuts will stay fresh for 48 hours. However, you can freeze them for up to 6 months (without frosting) and reheat them when needed.
