🥘 Blueberry Baked Donuts Ingredients
This ingredient list may be lengthy, but it is primarily household ingredients! You can also choose to use either fresh or frozen blueberries! Just make sure you have a donut pan, some measuring cups, and a spoon!
Blueberry Baked Donuts
- Sugar - ½ cup of sugar.
- Brown Sugar - ⅓ cup of packed light brown sugar.
- Butter - ¼ cup of salted, room temperature butter.
- Oil - ¼ cup of cooking oil.
- Eggs - 2 large eggs that have been beaten, at room temperature.
- Baking Powder - 2 teaspoons of baking powder.
- Vanilla - 1½ teaspoon of vanilla extract.
- Nutmeg (optional) - 1 teaspoon of ground nutmeg.
- Salt - ¾ teaspoon of salt.
- Flour - 2⅔ cups of all-purpose flour.
- Buttermilk - 1 cup of room temperature buttermilk (or milk).
- Blueberries - 1½ cups of blueberries (fresh or frozen - thawed).
Vanilla Icing
- Confectioner's Sugar - 1 cup of confectioner's sugar.
- Milk - 1 tablespoon of milk (up to 2 tablespoons, as needed).
- Vanilla - 1 teaspoon of vanilla extract.
- Salt (optional) - 1 pinch of salt (if your icing is too sweet).

🔪 How To Bake Blueberry Donuts
These donuts are way easier to make than using a deep fryer! Just make sure you have a donut pan, some measuring cups, and a mixing bowl!
This recipe will make you 18 donuts, so it's perfect for church, the office, or when the kids have friends sleepover!
Blueberry Baked Donuts
- Preheat. To get started, preheat your oven to 425°F (220°C) and lightly grease your donut pan.
- Cream wet ingredients. Next, add ¼ cup of butter, ¼ cup of oil, ½ cup of sugar, and ⅓ cup of light brown sugar into a mixing bowl. Using a mixer, cream them together, and then add 2 beaten eggs, 2 teaspoons of baking powder, 1½ teaspoons of vanilla extract, ¾ teaspoon of salt, and optional 1 teaspoon of ground nutmeg. Mix until everything is well combined.
- Add milk and flour. Next, you'll want to add your 2⅔ cups of flour and 1 cup of buttermilk by alternating between them and gradually adding small amounts each time. Make sure your batter is well-incorporated, but not overmixed.
- Add blueberries. Gently fold your 1½ cups of blueberries into the batter and then pour it into your donut pan, ensuring that you leave some space so that they can rise (only fill ⅔ of the way).
- Bake. Transfer the pans to the center rack of your oven and bake for 8-10 minutes. You'll know they are done when you can see some lightly browned edges.
- Cool. Once finished, remove the baked donuts from your oven and let them cool for 5 minutes before removing them from the pan to finish cooling on a wire rack.
Easy Vanilla Icing
- Mix. First, in a mixing bowl, combine 1 cup of confectioner's sugar with 1 tablespoon of milk (or lemon juice), 1 teaspoon of vanilla extract (omit if using lemon juice), and a pinch of salt, if using. Use a spoon to mix, adjusting the consistency (add more milk to make it thinner) until you have a nice free drizzle that clings well to your spoon.
- Dip. Finally, dip your donuts, top side down, into your icing and lift away. Allow the icing to run off the donuts, then turn and place back on a wire baking rack to set. *Make sure to set a sheet of parchment paper under your rack to catch the dripping icing.
These baked donuts are perfect just the way they are! However, you can pair them with some hashbrowns casserole and chorizo and eggs to make a well-rounded breakfast lineup! Enjoy!
💭 Angela's Pro Tips & Notes
- Only mix your ingredients until they are just incorporated, do not overmix! If you overmix the batter, you can have tough donuts.
- You can either spoon the donut batter into your pans or use a piping bag or plastic Ziploc bag with the corner cut off.
- Baked donuts can easily become dry. If you stick a toothpick into the center, you want there to be a few moist crumbs sticking to it.
- Lemon Juice can be used for your icing, just swap it out for the milk. To add an extra touch, top them with fresh lemon zest.
🥡 Storing
If you have leftovers, keep your baked donuts in a sealed container at room temperature for up to 2 days.
If you want to freeze them, make sure they are completely cooled and then place them into a freezer bag (squeezing out excess air). It is best to freeze donuts that do not have icing. Enjoy within 6 months and thaw in the microwave on 50% power.
❓ Can You Bake Donuts Instead Of Frying Them?
Yes! I actually prefer them to be baked. Not only are they easier to make, but they also aren't as messy and they are healthier! Yum!
❓ Do Baked Donuts Taste The Same As Fried?
Overall, they are extremely similar in flavor. However, there are some slight differences between baked and fried doughnuts. Baked donuts have a more cakey consistency and they don't have the typical flavor you get from fried foods. However, they are still super tasty (and much healthier!)
❓ Can You Bake Donuts Without A Donut Pan?
Yes, you can definitely DIY a donut pan! All you'll need is a muffin pan and some aluminum foil. Grab a small square of foil (about 4"x4") and place your finger directly in the center. Mold the foil around your finger (making the donut hole) and then crimp up the rest of the foil to be the rounded edges of the donut! Place them into your muffin pan and voila!

Instructions
