Sugar Cookie Apple Cobbler

This sugar cookie apple cobbler is the perfect sweet treat for a large crowd and it only uses 2 ingredients. Sprinkle on some apple pie spice to take the flavors to the next level. This dessert is so tasty (especially with some vanilla ice cream) that you'll have everyone coming back for more!

This sweet cobbler has a crisp and chewy sugar cookie topping with gooey and warm filling. It only takes 2 ingredients to make with just a couple of minutes of actual prep work.

The oven does all of the hard work in this recipe. Plus, it makes a big batch so it is perfect for getting together.

🥘 Ingredients

This 2-ingredient dessert is so simple. Just pick out your favorite apple pie filling brand and your favorite ready-to-use sugar cookie dough.

  • Apple Pie Filling - 63 ounces (3 21-ounce cans) of apple pie filling.
  • Sugar Cookie Dough - 1 16.5-ounce package of prepared sugar cookie dough. You can, of course, use my favorite sugar cookie recipes too. 🙂 Try the vintage Betty Crocker sugar cookies or my classic sugar cookie recipe. You won't need the full recipe, so chill the leftover dough in the fridge to bake up later!
  • Apple Pie Spice (optional) - 1½ teaspoons of apple pie spice (check out my recipe for apple pie spice or use your favorite brand).

🔪 How To Make Sugar Cookie Apple Cobbler

Using canned filling and pre-made cookie dough makes this as easy as it gets. All you will need for this recipe is a 9x13 baking dish.

This recipe will make a great amount of cobbler (12 servings), but you can also add on some ice cream to serve even more people.

  1. Preheat. To get started, preheat your oven to 350°F (180°C).
  2. Add apples. Pour the 3 cans of apple pie filling into a 9x13 baking dish.
  3. Cover with cookie dough. Next, crumble the 16.5-ounce package of prepared sugar cookie dough over the top of the apples. Make sure to cover the entire surface in a thick layer.
  4. Bake. Sprinkle with 1½ teaspoons of apple pie spice, if desired, and then place into the oven and bake uncovered for roughly 40-45 minutes, or until the cookie crust has become golden in color and the juice is bubbling (*see note).
  5. Serve. Once finished, remove from the oven and serve warm.

This super sweet cobbler doesn't need anything else! However, you could always add on a scoop of vanilla ice cream, some fresh whipped cream, and a drizzle of toffee sauce. Enjoy!

💭 Angela's Pro Tips & Recipe Notes

  • You can reduce the sweetness of this easy cobbler by combining one or two 8 to 12-ounce bag(s) of thawed fruit or berries with 2 cans of apple pie filling.
  • Stir in ¼ teaspoon of cinnamon or apple pie spice to boost the flavor of your apples (before topping with sugar cookie dough).
  • Even when your cookie dough has turned golden brown, your cookies could still be under-baked. It is best to check by inserting a toothpick and making sure it comes out almost completely clean. *Pie filling will cling to it, but you don't want to see runny cookie dough clinging to your toothpick.
  • If your dough has browned but is not done cooking, cover your dish with aluminum foil and then bake it for an additional 5 minutes.
  • To store: Place your leftovers into an airtight container in the fridge for up to 5 days.
  • To reheat: Place portions in the microwave and heat in 30-second increments until warmed through.

Why Is My Cobbler Soggy?

Your cobbler could be soggy for a couple of reasons. First, the fruit used was extra juicy! This isn't the case if you used canned fruit filling, though.
Secondly, your cobbler could be soggy if you haven't let it cool long enough after baking. You don't have to let your cobbler cool completely, but it should sit for 10 minutes or so after it comes out of the oven so it can finish thickening up.

What's The Difference Between A Crisp And A Cobbler?

Of course, both of these dishes are very similar and both contain a fruit pie filling as well as a crust of some sort. You can read all about the differences on my 'Cobblers, Crumbles, Crisps & Buckles' article.
In short, a cobbler has a fruit filling and some type of top crust/biscuit topping, yet lacks a bottom crust. On the other hand, a crisp specifically has a streusel topping just like my apple crisp.

Can I Use A Different Kind Of Cookie For This Recipe?

Sure! You can swap the cookie dough out for whatever flavor you like! I think snickerdoodle cookie dough or oatmeal cookie dough would taste fantastic.

    Do I bake the cookie dough first before crumbling on top of apple filling 🤔
    Or do I sprinkle baked cookie dough on top 🤔
