Butterscotch Brownies

Butterscotch brownies are a chewy and indulgent golden treat that is packed with sweet butterscotch morsels! These tasty bars are the perfect blend of brown sugar, creamy butter, and rich butterscotch, making them a favorite dessert for both kids and adults alike! They are sure to satisfy your sweet tooth in a snap!

Rich & Tasty Butterscotch Brownies

Brownies are such a simple and well-loved dessert that is perfect for any occasion (or for no reason at all!) This butterscotch version is a new household favorite that I just can't seem to get enough of!

I guess these are technically blondies and not brownies (since they don't have cocoa powder), but they are ridiculously delicious nonetheless! If you're a butterscotch fan, then you will be absolutely blown away by these!

🥘 Butterscotch Brownies Ingredients

Along with some household baking ingredients, you'll need to grab a package of butterscotch morsels. You can find these on the baking aisle right alongside the chocolate chips!

  • Butter - 1 cup of melted butter.
  • Brown Sugar - 1¼ cups of light brown sugar, packed.
  • Sugar - ½ cup of white granulated sugar.
  • Vanilla - 1 tablespoon of pure vanilla extract.
  • Baking Powder - 2 teaspoons of baking powder.
  • Salt - 1 teaspoon of salt.
  • Eggs - 3 large eggs at room temperature.
  • Flour - 2½ cups of all-purpose flour, spooned and leveled.
  • Butterscotch Chips - 1 cup of butterscotch morsels, divided into a ⅔ cup portion and a ⅓ cup portion.
  • Walnuts (optional) - ½ cup of chopped walnuts or pecans.

🔪 How To Make Butterscotch Brownies

These one-bowl brownies are so easy to make that anyone can do it! All you need to grab is a large mixing bowl, your measuring utensils, a 9x13 baking dish, and a rubber spatula.

This recipe will make one 9x13 dish of brownies that can be cut into 24 servings.

  1. Preheat. Preheat your oven to 350°F (175°C) and prepare a 9x13 baking dish by spraying it with nonstick spray, lightly greasing it with butter or oil, or lining it with greased parchment paper.
  2. Mix. In a large mixing bowl, mix together 1 cup (227 g) of melted butter, 1¼ cups (275 g) of light brown sugar, and ½ cup (100 g) of sugar until thoroughly combined.
  3. Add. Add 1 tablespoon (14.8) of vanilla extract, 2 (8 g) teaspoons of baking powder, and 1 teaspoon (6 g) of salt and stir to combine. Then, mix in 3 large eggs until smooth.
  4. Fold. Stir in 2½ cups (313 g) of all-purpose flour until just incorporated without over-mixing. Then fold in ⅔ cup (108 g) of butterscotch morsels as well as the optional ½ cup (59 g) of chopped walnuts.
  5. Bake. Pour the batter into your baking dish and then bake in the oven at 350°F (175°C) for 30-35 minutes, or until a toothpick inserted into the center of the blondies has no wet batter on it.
  6. Cool. Remove from the oven and immediately add the remaining ⅓ cup (53 g) of butterscotch morsels over top of the warm brownies and place the pan on a wire cooling rack. Allow the butterscotch brownies to cool slightly before cutting and serving.

Stabilized Whipped Cream

These sweet brownies are completely delicious on their own! However, they also taste amazing with a drizzle of toffee sauce, a scoop of ice cream, and a dollop of whipped cream! Enjoy!

💭 Angela's Pro Tips & Recipe Notes

  • Lining the pan with parchment paper makes lifting the brownies out of the pan easy.
  • Using high-quality butter, brown sugar, and vanilla can really make a difference in these brownies!
  • Feel free to add in ½ cup of chopped walnuts if you like!
  • Over-mixing the brownie batter will make them tough. You'll want to stop mixing as soon as the flour is incorporated. 
  • Avoid over-baking your brownies. When you remove them from the oven, the butterscotch brownies may look slightly under-baked, but they will finish cooking as they cool.

Can I Freeze Butterscotch Brownies?

Yes! Slice your brownies into squares and wrap each one individually in plastic wrap. Place them all into a large freezer-safe bag and squeeze out any excess air. Store them in the freezer for up to 3 months!

If you want neat and clean brownie slices, you'll want to let them cool completely before cutting them. Run a clean, sharp knife under some hot water to warm it up. Wipe the knife dry and then slice the brownies, wiping off the knife after each cut.

Why Did My Butterscotch Brownies Turn Out Dry?

These brownies are tender and fudgy. If they turned out dry, you most likely over-baked them! Always check to see if they are done a couple of minutes before the recommended bake time.
