    Easy Tater Tot Breakfast Casserole

    In this easy tater tot breakfast casserole, you'll find all of your favorite breakfast staples mixed together in savory, delectable layers! Tater tots are topped with bacon, breakfast sausage, eggs, and cheddar cheese to make a hearty casserole that no one can resist.

    With just 5 minutes of prep time, this recipe is quick and easy to whip up on busy mornings, or when you are entertaining guests during the holidays! It is also great for meal prepping because the leftovers reheat beautifully.

    🥘 Tater Tot Breakfast Casserole Ingredients

    If you're like me and love making breakfast, then you likely have most of these ingredients on hand already! If not, a quick trip to the grocery store may be needed.

    • Bacon - 4 thick-cut bacon strips.
    • Breakfast Sausage - 1 pound of breakfast sausage. You could use hot sausage if you like things spicy!
    • Frozen Tater Tots - 1 ½ pounds frozen tater tots (you will need between 16-24 ounces).
    • Eggs - 12 large eggs (at room temperature).
    • Milk - ½ cup milk (at room temperature).
    • Chives - 1 tablespoon of freeze-dried chives (or fresh).
    • Salt & Pepper - ½ teaspoon of each, salt & pepper (to taste).
    • Onion Powder - ½ teaspoon of onion powder.
    • Cheddar Cheese - 3 cups of shredded cheddar cheese. Freshly shredded cheese will melt best!

    🔪 How To Make Tater Tot Breakfast Casserole

    With a prep time of only 5 minutes, this casserole is beginner-friendly! Take out a skillet, measuring cups, a 9X13 baking pan, (or a 2.5-quart casserole dish), and a small mixing bowl to begin.

    This tater tot casserole yields around 10 servings. There is plenty to share with a hungry crowd or meal prep for a few days!

    1. Prep. Preheat your oven to 350°F (175°C) and lightly grease your 9x13 pan or 2.5-quart casserole dish.
    2. Cook bacon. In a large frying pan cook the 4 pieces of bacon over medium-high heat until browned and crisp. Set aside and drain on paper towels until cooled slightly, then chop into small pieces while the sausage cooks.
    3. Cook sausage. Drain the excess grease from your skillet and add the 1 pound of pork sausage. Cook until browned, crumbling as it cooks, and then set aside.
    4. Assemble the first layer. While the sausage cooks spread an even layer of 1 ½ pounds of frozen tater tots in your prepared baking dish.
    5. Add ingredients. Beat the 12 large eggs, ½ cup of milk, 1 tablespoon of chives, and seasoning together. Add the cooled sausage, about half of the chopped bacon, and half of the shredded cheese then stir to combine.
    6. Bake. Pour egg mixture over tater tots and bake at 350°F (175°C) for 30 minutes then remove from the oven and add the remaining shredded cheese and chopped bacon. Continue cooking for an additional 10-15 minutes until the eggs are fully set in the center of your casserole.
    7. Cool and serve. Remove from oven and allow to cool slightly before slicing and serving.

    💭 Angela's Tips & Recipe Notes

    • You can use any pork breakfast sausage. The ground pork sausage that is available in your local grocery store or butcher will work, as will Jimmy Dean brand sausage in chubs (Hot, Mild, Country Mild, Regular, Maple) as well as their patties or links. Cook patties or links as directed on the package, then chop them into small pieces for the casserole.
    • Using room temperature ingredients helps your casserole to cook quickly and evenly. Set out your ingredients when starting and allow them to warm slightly as you follow the directions.
    • You can warm refrigerated eggs quickly by placing them in a bowl of warm water (tepid, not hot) for 5 minutes.

    🥡 Storing & Reheating

    Store leftover tater-tot breakfast casserole in an airtight container in the refrigerator for up to 4 to 5 days.

    This casserole can also be frozen for up to 2 months. I recommend wrapping individual leftover slices in plastic wrap, then placing them into a freezer-safe container.

    Reheating Tater Tot Breakfast Casserole

    The reheating process of this breakfast casserole is very simple! Preheat your oven to 350°F (175°C) and place your leftovers in an oven-safe dish. Cook for 15-20 minutes, or until the casserole is heated through. You can also microwave individual pieces in 30-second increments until heated through to your liking.

    What Does This Casserole Go With?

    When I make savory and hearty breakfast casseroles, I like to serve them with a side that is light and on the sweeter side to balance the meal. Either a fresh fruit salad or some strawberry yogurt muffins, apple oatmeal muffins, or banana blueberry muffins would pair wonderfully!

    Can I Make Tater Tot Breakfast Casserole Ahead Of Time?

    Yes! If you are not a morning person or plan on making this dish on a busy holiday morning, you can definitely prepare it ahead of time. Portion everything out separately until you are ready to cook. Don't assemble to casserole until you are preheating your oven or the tater tots could get soggy from absorbing moisture.

    Can You Freeze Tater Tot Breakfast Casserole?

    Absolutely! If you feel like you won't be able to finish leftovers within 4-5 days and you aren't feeding a large crowd, you can freeze it for up to 2 months! Wrap individual slices with plastic wrap and place them into an airtight container in the freezer. Thaw your leftovers in the fridge overnight before reheating.

    Ingredients
     

    • 4 pieces bacon (thick cut bacon strips)
    • 1 lbs breakfast sausage
    • 1 ½ lbs frozen tater tots (you will need between 16-24 ounces)
    • 12 large eggs (at room temperature)
    • ½ cup milk (at room temperature)
    • 1 tablespoon freeze-dried chives (or fresh)
    • ½ tsp each, salt & pepper (to taste)
    • ½ teaspoon onion powder
    • 3 cups cheddar cheese (shredded)

    Instructions

    • Preheat your oven to 350°F (175°C) and lightly grease your 9x13 pan or 2.5-quart casserole dish.
    • In a large frying pan cook the bacon over medium-high heat until browned and crisp. Set aside and drain on paper towels until cooled slightly, then chop into small pieces while the sausage cooks.

    • Drain the excess grease from your skillet and add the pork sausage. Cook until browned, crumbling as it cooks, and then set aside.

    • While the sausage cooks, spread an even layer of frozen tater tots in your prepared baking dish.
      1 ½ lbs frozen tater tots
    • Beat the eggs, milk, chives, and seasoning together. Add the cooled sausage, about half of the chopped bacon, and half of the shredded cheese then stir to combine.

    • Pour egg mixture over tater tots and bake at 350°F (175°C) for 30 minutes then remove from the oven and add the remaining shredded cheese and chopped bacon. Continue cooking an additional 10-15 minutes until the eggs are fully set in the center of your casserole.
    • Remove from oven and allow to cool slightly before slicing and serving.
