Saturday brunch is one of my favorite ways to kick off the weekend because it gives me a chance to slow down and enjoy good food with the people I love. I’ve pulled together a collection of brunch recipes that I make often and know you’ll want to come back to again and again.

Sometimes I keep it simple, and other times I like to make something a little more special, which is why this list has a bit of everything. 1. Ham, Cheddar Cheese, & Chives Scones

8. Homemade Waffles

Crispy on the outside and fluffy inside, these waffles are a weekend staple in my kitchen. You can keep it simple by topping them with butter and syrup, but fresh berries (or roasted berries) make them extra special and give off more of a 'brunch vibe'.

💭 Saturday Brunch Tips and Tricks

  • Prep ahead whatever you can. Many of these recipes, like the overnight French toast bake or the bacon breakfast casserole, can be made the night before. Doing prep ahead saves time in the morning and makes brunch stress-free.
  • Mix sweet and savory. A great brunch has a balance of sweet pastries, pancakes, and savory dishes like quiches, egg casseroles, and breakfast meats. Offering a variety lets everyone at the table find something they love.
  • Use fresh ingredients. Fresh fruit, eggs, and herbs make a noticeable difference in flavor. Even small touches like fresh chives on a scone or raspberries on French toast or crepes elevate the meal.
  • Keep it casual. Brunch doesn’t have to be fancy to be delicious. Serving dishes buffet-style or on a brunch board, or even simple things like an assortment of bagels with different spreads, makes it easy for guests to serve themselves and enjoy a relaxed morning.
  • Make it fun. Let people customize pancakes, waffles, or breakfast quesadillas with their favorite toppings. It’s a simple way to make brunch interactive and memorable.
  • Moctails and coctails. No brunch is complete without brunch cocktails or a mimosa mocktail!

Ingredients
 

  • 2 cups all-purpose flour
  • ¼ cup sugar
  • 3 teaspoon baking powder
  • ½ teaspoon salt
  • 1⅓ cups milk (room temperature)
  • 5 tablespoon butter (melted, plus more for the griddle)
  • 1 teaspoon vanilla extract

(Note: 2x or 3x only changes the ingredient list)

Instructions
 

  • Mix together your dry ingredients in a large bowl (2 cups all-purpose flour, ¼ cup sugar, 3 teaspoon baking powder, and ½ teaspoon salt).
  • Pour in the 1⅓ cups milk, melted 5 tablespoon butter, and 1 teaspoon vanilla extract. Use a whisk to mix it all together, stopping as soon as the ingredients are incorporated. *You do not want to overmix the batter, it is okay to still have some lumps.
  • Turn your griddle (or skillet) to medium-low heat and thoroughly coat it with butter.
  • Once the griddle or skillet is hot and the butter has melted, pour 1 tablespoon portions of batter onto the griddle, leaving about 1 inch of space in between each pancake.
  • Cook for about 2 minutes, or until you see tiny bubbles begin to appear on the pancakes. Use a spatula to flip the pancakes and then cook for about 1 more minute, or until lightly browned. *If you want extra crisp edges, swirl the melted butter over the edges of the pancakes, adding more butter to your pan as needed.
  • Remove the cooked pancakes from the skillet/griddle and add more butter before cooking a second batch. Repeat until all of the pancake batter has been cooked. Serve immediately.

Notes

  • This recipe will yield roughly 24 mini pancakes.
  • You can use a mini ice cream scoop or cookie scoop for uniform pancakes!
  • Add in some tasty mix-ins like blueberries, chocolate chips, bananas, or chopped nuts!
  • To freeze: These pancakes make a great freezer breakfast! Simply allow them to cool completely and place them into a zip-top storage bag. They can be frozen for up to 3 months. 
  • To reheat from frozen: When ready, reheat your pancakes straight from frozen for 20-30 seconds in either the microwave or a toaster oven.
