🔪 How To Make Egg Burgers
These egg burgers are quick and easy to make! You'll need a small mixing bowl, a heavy-bottomed pan or skillet, and a spatula for flipping your burgers.
I made 3 burgers with 1 pound of beef. You can always make more, just be sure not to overcrowd the pan and work in batches if necessary.
Burger Patties
- Form patties. Divide 1 pound of ground beef into 3 equal portions (they will be just over 5 ounces each). Shape each portion into a ball with your hands and press gently to flatten them into a patty that is about 1 inch thick.
- Season. Place a large skillet or heavy-bottomed pan on the stovetop over medium heat. Season each of the burgers with 1 ½ teaspoons of burger, and make sure to season both sides.
- Sear. Once the skillet is nice and hot, add the patties and sear for about 5 minutes on the first side, or until nicely browned. Flip and sear the opposite side for 3-4 minutes or until it reaches an internal temperature of 135°F (57°C) for medium-rare. Add 1 slice of cheese to each burger 1 minute before the cooking time is over and cover the skillet so it will melt.
- Rest. Transfer the burgers to a plate or cutting board and loosely tent foil over the top. Allow them to rest for 5 minutes before assembling your cheeseburgers.
Sunny Side Up Eggs
- Fry the eggs. Meanwhile, add 1 tablespoon of butter to the skillet and reduce the heat to medium-low. Once the butter has melted, gently crack each of the 3 large eggs into the skillet. Cover and let cook until the egg is cooked but the yolk is still runny (for a sunny-side-up egg, you can cook them through if desired).
Assemble Your Burgers
- Assemble. Top the bottom half of each bun with 1 leaf of lettuce, followed by a cheeseburger patty, 1 strip of bacon, and an egg on top. Add any other desired condiments or toppings then close with the remaining bun. Serve immediately.

💭 Tips & Notes
- I like to use 80/20 ground chuck for my burgers, though regular ground beef is just fine too!
- If your burger patties are sticking to the bottom of the skillet they likely are not ready yet. Wait another minute or so and try again.
- You can toast your burger buns if desired. Just spread a bit of butter on each bun and place it in a skillet over medium heat butter-side-down. Cook for 2-3 minutes or until golden brown. This will help keep your burger from getting soggy from the egg yolk, though it is totally optional.
🥡 Storing & Reheating
Leftovers can be placed in an airtight container and refrigerated for up to 3 days.
For the best flavor and texture, make a fresh fried egg for leftover burgers. However, the fried eggs can be refrigerated with the burger. Just keep in mind the egg will cook through more when reheated and may not be as runny.
How To Reheat Burgers
The easiest way to reheat your egg burgers is in the microwave for 1-2 minutes or until warmed through. However, you can also place them on a baking pan and put them in the oven at 350°F (175°C) for 8-10 minutes.

❓ Recipe FAQs
White Castle claims the originator of the egg burger was Otto Kuase of Hamburg, Germany. Back in 1891 he pan-seared a hamburger in butter and topped it off with a pan-fried egg.
Most commonly you will see an egg burger called just that, an 'egg burger'. Some restaurants have coined their own terms for a burger with an egg on top including a 'brunch burger' or a burger 'Humpty Dumpty' style.
Generally, you want to maintain a runny yolk when adding an egg to a burger. Pan-frying an egg in butter is the easiest way to quickly whip up a sunny-side-up egg. I cover it as it cooks to help cook the top of the egg quickly so I can remove it from the pan before it cooks through the yolk. If you don't like egg yolk, you can certainly cook your eggs all the way through.
