Roasted Sweet Potatoes & Onions

Roasted sweet potatoes & onions are tossed with oil and spices and then baked in the oven for a perfect sweet and savory side dish. In fact, it is so versatile that it pairs well with practically any entree. While they can easily be enjoyed by themselves, you can also add them to salad, tacos, or bowls for an easy upgrade to your favorite recipes.

This dish is super versatile, try it as a side dish for some smoked leg of lamb or grilled BBQ chicken breast.

I love cooking sweet potatoes any time of year, but especially in the fall time. They are naturally sweet, nutritious, and can be cooked in a ton of different ways.

This recipe is extra simple and lets the natural flavors of the sweet potato shine. Plus, it pairs well with everything and my whole family loves it!

🥘 Ingredients

This short ingredient list is super simple, you might already have these items.

  • Sweet Potato - 6 cups of peeled and diced sweet potatoes. This is about 2-3 large potatoes.
  • Onion - 1 cup of diced yellow onion. You can also use white onion.
  • Oil - 1 tablespoon of extra virgin olive oil (EVOO). Use up to 2 tablespoons, if needed.
  • Garlic - 1 tablespoon of minced garlic.
  • Garlic Powder - 1 teaspoon of garlic powder.
  • Salt & Pepper - 1 teaspoon of both salt and pepper, to taste.
  • Thyme - 1 teaspoon of thyme.
  • Parsley (optional) - 1 tablespoon of chopped fresh parsley for garnish.

🔪 How To Roast Sweet Potatoes & Onions

Roasting these yummy veggies is a truly simple process that is great even for beginners. Just grab a baking sheet and you are good to go.

This recipe uses 1 cup of sweet potatoes per serving, so you can add more or fewer potatoes to adjust it to your needs.

  1. Prepare. To get started, preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Add the veggies. Add your 6 cups of peeled and diced sweet potatoes, 1 cup of diced onion, and 1 tablespoon of minced garlic.
  3. Season. Sprinkle 1 teaspoon each of garlic powder, thyme, salt, and pepper on top of the vegetables, and then drizzle with 1-2 tablespoons of extra virgin olive oil (EVOO). Gently toss until all of the veggies are well coated.
  4. Bake. Roast in the oven at 450°F (230°C) for 30-35 minutes, stirring the vegetables every 10-15 minutes or so in order to prevent burning.
  5. Garnish and serve. Once the sweet potatoes are fork-tender, remove your baking sheet from the oven and serve immediately garnished with 1 tablespoon of chopped fresh parsley, if desired.

  • I love using this seasoning combination for a delicious and savory meal. However, you can play around with different spices like cumin, garam masala, chili powder, or paprika!
  • To store: Keep any leftovers in an airtight container in the fridge for up to 5 days.
  • To reheat: Reheat in small bursts in the microwave or in the oven.

Should I Par Boil My Sweet Potatoes Before Roasting?

Nope! There is no need to boil or cook your potatoes beforehand. These sweet potatoes will be perfectly cooked in the oven!

Can You Eat Sweet Potato Skins?

Yes! Sweet potato skins are tasty and nutritious. You can always choose to leave the skin on if you like.

Should Sweet Potatoes Be Soaked Before Roasting?

This is a personal preference as to whether or not you want to soak them. Soaking them helps to release some of the starches from the surface, causing them to become extra crispy.
If you want to soak them, put them into a bowl of ice water for an hour or two and then rinse them off and pat them dry before continuing with the recipe.

Ingredients
 

  • 6 cups sweet potatoes (peeled & diced, about 2-3 large potatoes)
  • 1 cup yellow onion (diced, or use white onion)
  • 1 tablespoon olive oil (extra virgin, up to 2 tablespoons)
  • 1 tablespoon garlic (minced)
  • 1 teaspoon garlic powder
  • 1 teaspoon each, salt & pepper (to taste)
  • 1 teaspoon thyme

    I absolutely love this recipe. I lived alone and have added this to my “Often” list. I buy one large sweet potato and make it for just myself. Get two side dish meals from that and it is delicious and healthy! Thank you.
