🔪 Instructions
Pan-searing these steak bites is super easy, but it goes very fast. You will need a killer (*see note), a spatula, and a spoon for basting.
As an appetizer, this recipe will make about 6 servings. As a meal, I'd say it is closer to 3 or 4.
- Heat. Bring a large frying pan, skillet, or griddle with 1 tablespoon of olive oil to high heat. The oil should begin to shimmer and should be just starting to smoke.
- Season. Season 1 ½ pounds of cubed steak tips with steak seasoning, then add them to the skillet along with ½ a sprig (or more) of thyme for aromatics.
- Sear. Cook for about 4 minutes or until all sides are browned. If you are using a small pan, cook the meat in batches to prevent overcrowding the meat.
- Baste and serve. Just before serving, add 1 tablespoon of butter and baste the melted butter over the cooked steak tips for about 30 seconds. Serve immediately. Garnish with chopped parsley, if desired.
Use toothpicks to serve as an appetizer, or My favorite pasta method is to toss the cooked pasta in the pan juices with a bit of cream for an out-of-this-world beef noodle dinner! Enjoy!
💭 Tips & Notes
- Room Temperature Steak: Allow your steak to reach room temperature before cooking. This helps reduce cooking time and ensures a better sear on the meat.
- Using Cast Iron Skillets: For an even heat distribution and beautiful caramelization, use a cast iron skillet. It's ideal for achieving that perfect browned exterior on your steak bites.
- Avoid Overcrowding: When cooking steak bites, make sure not to overcrowd the pan. If necessary, cook the steak in batches to ensure each piece is evenly cooked and browned.
- Choosing Steak Cuts: While ribeye steaks and tenderloin are excellent choices for steak bites, they can be pricey. A more budget-friendly option is to use a chuck roast, cut into steaks or bites. Finish them with ghee for tender and flavorful bites from a less expensive cut of beef.
🥡 Storing & Reheating
You can place any leftovers into an airtight container in the refrigerator for up to 4 days.
If you want to freeze your steak bites, place them into a heavy-duty freezer bag and squeeze out excess air. Freeze them for up to 4 months, making sure to thaw them in the fridge overnight before reheating.
To reheat your steak tips, preheat your oven to 250°F (120°C). Place your steak tips in a baking dish and warm them in the oven for 20-25 minutes or until heated through.
❓ Recipe FAQs
The more tender the steak, the better! However, if you are on a budget, an expensive cut like a tenderloin or filet mignon may not be an option. Sirloin and ribeye steaks are the next best thing (though I am of the mindset that all steak bites are good steak bites!)
Mine were! The key is to sear them quickly at high heat. That way, the outside develops a delicious crust, but the inside stays tender.
You can serve them however you like! Try it on top of a bed of mashed potatoes, rice, or cream cheese pasta. You can even put toothpicks in them and serve them from a tray as an appetizer!

Pan Seared Sirloin Steak Tips (Steak Bites)
Ingredients
- 1 tablespoon olive oil (extra virgin)
- 1 ½ lb sirloin steak tips (cut into bite size cubes)
- ½ tablespoon steak seasoning
- 1 sprig rosemary (and/or fresh thyme)
- 1 tablespoon butter
Instructions
- Bring a large frying pan, skillet, or griddle with the 1 tablespoon olive oil to high heat. The oil should begin to shimmer, and should be just starting to smoke.
- Season the steak tips with ½ tablespoon steak seasoning, then add the cubed 1 ½ lb sirloin steak tips along with herbs for aromatics (like 1 sprig rosemary). Cook for about 4 minutes, or until all sides are browned. If you are using a small pan, cook the meat in batches to prevent overcrowding the meat.
- Just before serving, add the 1 tablespoon butter and baste the melted butter over the cooked steak tips for about 30 seconds. Serve immediately. Garnish with chopped parsley, if desired.
Notes
- Letting your steak come to room temperature before cooking will reduce cooking time and give you a better sear!
- Cast iron skillets are perfect for evenly distributing heat, resulting in a beautiful caramelization on your browned steak bites.
- Whichever pan style you use, leave enough room to not overcrowd the steak bites. Cook in batches, if needed.
- Ribeye steaks and tenderloin make divinely delicious steak bites, but they are a more expensive cut. For an even cheaper option use a chuck roast and cut it into steaks or bites (and finish them with ghee for the most amazingly tender bites from a less premium beef cut)!
