I've spent years perfecting my corned beef recipes and exploring creative ways to repurpose extra meat. From hearty sandwiches to comforting soups, here's my list of mouthwatering dishes that will totally transform your leftovers!
1. Corned Beef Hash
Corned beef hash is a classic breakfast that is delicious year-round but works exceptionally well to cure post-St. Patrick's Day hangovers. With its delicious blend of diced corned beef, potatoes, and onions cooked until crispy and golden brown, I'd call it Irish comfort food.
2. Irish Nachos
Like Mexican nachos, the toppings for Irish nachos are completely customizable, with one key difference: they call for thinly sliced potatoes instead of tortilla chips. Add your favorite baked potato fixings along with leftover chopped corned beef!
3. Pinwheel Sandwiches
Pinwheels come in many varieties and are easy to make with leftover corned beef and any fresh veggies in the fridge. There are a few different examples on my Pinwheels page, try swapping the meat for thin slices of corned beef.

💠Tips For Using Up Leftover Corned Beef
Although delicious, corned beef has a distinct flavor that works better in some recipes more than others. Here are a few of my favorite fool-proof ways to use up leftover corned beef:
- Corned Beef Hash: A classic. It’s one of my favorite breakfasts and so easy to make because the meat is already cooked. Just chop the beef, potatoes, and onions and fry them up in a skillet until golden and crispy!
- Sandwiches and Wraps: Outside of breakfast time, I usually opt for a corned beef wrap or sandwich. I like to slice the beef thinly and layer it with Swiss cheese, sauerkraut, and Russian dressing for an easy Reuben.
- Quiches and Frittatas: The creamy, cheesy egg custard used in quiches and frittatas pairs perfectly with the salty flavor of corned beef. Slice, dice, or chop your leftover beef and mix it right in before baking.
- Stir-Fries: Sometimes I like to mix my leftover corned beef into stir-fries for dinner. Just chop it up and saute it with some peppers, onions, or squash with a little stir-fry sauce and serve over rice or noodles.
- Salads: Cold corned beef is great on salads and adds a lot of flavor. It pairs best with mixed greens and a tangy Italian vinaigrette dressing, in my opinion.

Leftover Corned Beef Recipes: 15+ Delicious Meals For After St.Patrick's Day!
Ingredients
- 2 tablespoon butter
- 3 cups potatoes (diced into ¼-inch cubes, about 4 large potatoes)
- 1 large onion (white or yellow, chopped)
- 3 cups corned beef (cooked and chopped or shredded)
- salt & pepper (to taste)
Instructions
- Heat 2 tablespoons of butter in a large skillet over medium heat. Once melted, add the onions and potatoes and saute until tender (about 10-15 minutes).
- Add the chopped corned beef to the skillet and stir to combine. Spread everything out in an even layer across the surface of the pan and increase the heat to medium-high.
- Cook for 3-4 minutes undisturbed, or until browned. Use your spatula to press down on the corned beef hash so it gets nice and crispy. Check the underside, once it is nicely browned flip the hash over to brown the other side. *If your hash is sticking to the pan, add a touch more butter.
- Once you've browned the hash, add salt & pepper to taste and serve immediately while hot.
Notes
- For even crispier hash, try using leftover cooked potatoes that have been refrigerated overnight. The cold potatoes will crisp up better when fried.
- Make sure to chop the corned beef and potatoes into small, bite-sized pieces for even cooking and better texture.
- If you don't have leftover cooked corned beef, you can cook a corned beef brisket in a slow cooker or in the oven according to package directions, then chop it for the hash. If you have leftover corned beef and cabbage, chop the cabbage too and toss it in (it's delicious)!
- If you like your hash spicy, you can add a pinch of cayenne pepper or hot sauce to the skillet while cooking.
- For a classic breakfast combination, serve the corned beef and hash with fried or poached eggs on top.
- To store: Let leftovers cool off, then place them in an airtight container in the fridge for 2-3 days.
- To reheat: You can reheat individual portions in the microwave, or add them back to a skillet over medium heat until crispy and warmed through.
