🥘 Ingredients
The packaged spice mix primarily contains mustard seed, coriander, bay leaf, dill seed, and peppercorns. You could also use some pickling spices in a pinch.
My handpicked blend stars mustard seeds for their tangy kick, coriander seeds for a hint of citrus, and a selection of other spices. Each is chosen for their unique contribution to the mix's overall flavor profile.

🔪 How To Make DIY Corned Beef Seasoning
- Combine all seasoning mix ingredients for immediate use.
- Use to brine corned beef or to cook (oven-roasted, slow cooker, pressure cooker) your 3-4 lb brisket portion.
- Store unused spice blend in an airtight container.
Please note that I LOVE cooking with whole spices for certain dishes. You can (and are most welcome to) substitute ground spices for their whole counterparts.
In that case, and for this corned beef seasoning mix, if the spice calls for 1 teaspoon whole spice, use ¼ teaspoon of the ground spice for the equivalent flavor in the corned beef.
💠Angela's Pro Tips & Notes
- Freshly ground spices are also an extra special treat. My favorite is to use a coffee grinder and freshly grind our whole fennel seeds whenever they are called for in a recipe. Yum!!
- Try this optional step before combining the spices: Lightly toast the mustard and coriander seeds in a dry pan, then gently crush them with a mortar and pestle. This releases their aromatic oils for their full flavor.
- Once the toasted mustard and coriander have been crushed, combine them with the rest of the spices in a bowl. Mix thoroughly to ensure an even blend.
- Tailor the mix to your palate by adjusting the spice quantities. Love a bit more heat? Add an extra pinch of red pepper flakes. Prefer a sweeter undertone? A hint of allspice can transform the blend.
- Use this seasoning mix in other dishes! Stir it into soups and stews for added richness, or rub it onto chicken and pork before grilling for a smoky, complex flavor. It's also an excellent seasoning for fish, potato salad, roasted vegetables, and hot cheese dips.

Corned Beef Seasoning Mix Recipe
Ingredients
- 2 bay leaves
- 12 whole peppercorns
- ½ tablespoon mustard seeds
- ½ tablespoon coriander seeds
- 8 allspice berries
- 8 whole cloves
- 1 teaspoon salt
- ½ teaspoon fennel seeds
- ½ teaspoon dill seed
- ½ teaspoon star anise seeds
- ½ teaspoon ground ginger
- 2 cardamom pods
- 1 cinnamon stick (broken into at least two pieces)
Instructions
- Combine all seasoning mix ingredients for immediate use. (2 bay leaves, 12 whole peppercorns, ½ tablespoon mustard seeds , ½ tablespoon coriander seeds, 8 allspice berries, 8 whole cloves, 1 teaspoon salt, ½ teaspoon fennel seeds, ½ teaspoon dill seed, ½ teaspoon star anise seeds, ½ teaspoon ground ginger, 2 cardamom pods,1 cinnamon stick)
