This corned beef seasoning mix is the perfect blend of spices to cook a tender, tasty corned beef and cabbage dinner. Using my homemade blend of spices vs. the usual spice packet is easy. You can add the spices to your roast as it cooks or opt to use a bouquet garni! Use this as a corned beef spice packet, spices for brining, or a rub for your corned beef.
Combine all seasoning mix ingredients for immediate use. (2 bay leaves, 12 whole peppercorns, ½ tablespoon mustard seeds , ½ tablespoon coriander seeds, 8 allspice berries, 8 whole cloves, 1 teaspoon salt, ½ teaspoon fennel seeds, ½ teaspoon dill seed, ½ teaspoon star anise seeds, ½ teaspoon ground ginger, 2 cardamom pods,1 cinnamon stick)

Use to brine corned beef or as a rub to cook (oven-roasted, slow cooker, or pressure cooker) your 3-4 lb brisket portion.
Store unused spice blend in an airtight container.

Try this optional step before combining the spices: Lightly toast the mustard and coriander seeds in a dry pan, then gently crush them with a mortar and pestle. This releases their aromatic oils for their full flavor.
Once the toasted mustard and coriander have been crushed, combine them with the rest of the spices in a bowl. Mix thoroughly to ensure an even blend.
Tailor the mix to your palate by adjusting the spice quantities. Love a bit more heat? Add an extra pinch of red pepper flakes. Prefer a sweeter undertone? A hint of allspice can transform the blend.
Use this seasoning mix in other dishes! Stir it into soups and stews for added richness, or rub it onto chicken and pork before grilling for a smoky, complex flavor. It's also an excellent seasoning for fish, potato salad, roasted vegetables and hot cheese dips.
