Chocolate Chip Baked Donuts

  1. Preheat and prep the pan. Preheat your oven to 425°F (220°C). Lightly grease your donut pans (or mini-donut pans) with some non-stick cooking spray.
  2. Mix wet ingredients. In a mixing bowl, add your ¼ cup butter, ¼ cup oil, ½ cup sugar, and ⅓ cup brown sugar. Using a mixer, cream together all of the wet ingredients. Then, add in the 2 eggs (already beaten), 2 teaspoons baking powder, 1 ½ teaspoon vanilla, and ¾ teaspoon salt. Mix until all of the ingredients are well-combined.
  3. Add dry ingredients. Next, slowly add in the 2 ⅔ cups flour and 1 cup milk by alternating between them and adding each one in small, gradual amounts. Mix the batter just enough for everything to be incorporated without over-mixing (*see note). Then gently fold in the ½ cup mini chocolate chips.
  4. Fill pans. Pour the batter into the greased donut pans, making sure to only fill each section about ⅔ of the way full, leaving space for the doughnuts to rise.
  5. Bake. Transfer the pans to the center rack of the hot oven and bake them for approximately 8-10 minutes. You'll know they are done when they have risen and the edges of the doughnuts are lightly browned (*see note).
  6. Cool slightly. Once finished, remove from the oven and allow the doughnuts to rest in the pan for about 5 minutes before you flip them out onto a cooling rack.

Chocolate Icing

  1. Cool completely. Allow your chocolate chip baked donuts to cool completely before mixing the chocolate icing.
  2. Melt chocolate and coconut oil. Melt the 1 cup chocolate chips with the 1 teaspoon coconut oil in a microwave-safe bowl. Heat in short 20-30 second increments, stirring between each heating.
  3. Top with icing. Once your chocolate is fully melted, dip the top side of your baked donuts into the bowl. Allow the excess to drip as you lift the dunked doughnut away, then flip and place on your wire cooling rack to set.

These chocolate chip baked donuts would pair well with any breakfast dish if you prefer a more well-rounded meal. Try it with our sour cream scrambled eggs and air fryer frozen sausage patties for a savory and balanced breakfast. Enjoy!

💭 Angela's Tips & Recipe Notes

  • Over-mixing the batter will result in some tough and chewy donuts. As soon as all of the ingredients are combined you can stop mixing.
  • You can use either a spoon or a storage bag (with the corner cut off) to transfer the doughnut batter into the pans.
  • If overcooked, baked doughnuts can easily become dried out. To check if they are done baking, insert a toothpick into the middle of the donut and remove it. You want to see a few crumbs stuck to the toothpick.

🥡 Storing

Store these donuts at room temperature in a storage bag or sealed container for about 2 days.

Let your donuts cool off completely and then place them into a freezer bag. They are best frozen before they have been iced or glazed. Freeze them for up to 6 months, making sure to thaw them overnight in the fridge or in the microwave at 50% power.

❓ Why Are My Baked Donuts Dry?

If the donuts end up dry, that means they are overcooked. To avoid this, insert a toothpick to check if the donuts are done. When the toothpick is removed, you will want to see a few crumbs stuck to it.

❓ What Is The Difference Between Cake Donuts And Regular Donuts?

Cake donuts are used with a cake batter instead of a yeast batter found in regular donuts.

❓Should I Put My Donuts In The Fridge?

You can leave donuts in room temperate in a storage bag or sealed container up to 2 days. If you want them to stay fresh longer, you can put them in the fridge up to 1 week.
