    🥘 Broccolini Slaw Ingredients

    It only takes 10 minutes and a few ingredients to make your slaw, with no cooking needed! You can use pre-shredded veggies to make prep time even simpler!

    • Broccoli Slaw - 12 ounces of broccoli slaw (or grated broccoli stems).
    • Carrots - 1 cup shredded carrots.
    • Broccolini - 1 bunch of broccolini (roughly chopped).
    • Greek Yogurt - 1 cup Greek Yogurt (or mayonnaise).
    • Dijon - 1 tablespoon of Dijon mustard (or a Dijon mustard alternative).
    • Salad Oil - 1 teaspoon extra virgin olive oil (EVOO) or your preferred oil.
    • Vinegar - 2 tablespoons of apple cider vinegar (or an apple cider vinegar substitute).
    • Seasoning - ¼ teaspoon each, salt & pepper (to taste).

    🔪 How To Make Broccolini Slaw

    This effortless broccolini slaw is quick to make and ready in only 3 steps! You will need a large mixing bowl, plastic wrap, and a box shredder to prep your veggies.

    This side dish makes about 6 servings. If you plan on using the slaw as a topping for tacos or wraps, you can spread it further!

    1. Prep veggies. Chop and shred 12 ounces of broccoli slaw, 1 cup of carrots, and 1 bunch of broccolini. Next, place the grated vegetables into a large mixing bowl.
    2. Make Sauce. In the large mixing bowl with veggies, add 1 cup of Greek Yogurt, 1 tablespoon of Dijon mustard, 1 tablespoon of olive oil, 2 tablespoons of apple cider vinegar, and ¼ teaspoon each of salt & pepper.
    3. Chill and Serve. Mix until all of the ingredients are thoroughly combined. Then, cover with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld before serving.

    Broccolini slaw is so tasty that it will have everyone asking you to bring it to the next summer cookout or potluck! My family loves to serve it alongside my incredibly delicious baked BBQ chicken thighs or blue cheese burgers. Enjoy!

    💭 Angela's Tips & Recipe Notes

    • If using mayo, be sure to select a good quality brand for the best flavor. My favorite brands are Hellmann's (aka Best Foods to my west coast foodies), and Duke's.
    • You can reduce the prep time even more by using pre-chopped broccoli florets and shredded carrots.
    • You could eat your slaw right away, but it tastes best chilled. Plus, a little time in the fridge gives the flavors time to marry.

    Can I Make Broccolini Slaw In Advance?

    Yes! This dish is perfect for making ahead and stores well in the fridge. However, you'll want to prepare it no sooner than the day before you need it, as it only stores well for about 4 days. It is awesome for leftovers throughout the week too!

    What Kind Of Different Fruits And Veggies Can I Add To Broccolini Slaw?

    I love adding cranberries and nuts to my slaw for a little added sweetness! You could also try bell peppers for that extra crunch! Go ahead and add any of your favorite veggies!

    Is Broccolini Slaw Nutritious?

    Yes, for sure! It is packed full of fiber, natural antioxidants, and vitamins. The broccolini itself is a great source of fiber, calcium, and potassium.

    Broccolini Slaw

    Ingredients
     

    • 12 oz broccoli slaw (or grated broccoli stems)
    • 1 cup carrots (shredded)
    • 1 bunch broccolini (roughly chopped)
    • 1 cup Greek Yogurt (or mayonnaise)
    • 1 tablespoon Dijon mustard
    • 1 teaspoon olive oil (extra virgin)

    Instructions
