Instructions
Chop and shred your veggies, then add all of the ingredients to a large mixing bowl.
Mix until all of the ingredients are thoroughly combined.
Cover with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld before serving.
Notes
If using mayo be sure to select a good quality brand for the best flavor. My favorite brands are Hellmann's (aka Best Foods to my west coast foodies), and Duke's.
You can reduce the prep time even more by using pre-chopped broccoli florets and shredded carrots.
You could eat your slaw right away, but it tastes best chilled. Plus, a little time in the fridge gives the flavors time to marry.
To store: Keep your broccolini slaw in an airtight container in the fridge for up to 4 days. Stir before serving.
