Australian Banana Slice Cake
Bananas are one of my favorite fruits to use for baking since they are naturally sweet and yield amazingly moist desserts! If you have never heard of it, a banana slice is essentially the Australian version of banana cake (check out my banana cake recipe here).
It is tender, sweet, moist, and packed with tons of flavor! Of course, adding a layer of lemon cream cheese frosting really takes the entire dessert to the next level.

🥘 Banana Slice Ingredients
You'll need some simple cake ingredients, ripe bananas, and a few items to whip up the frosting. Of course, you could use store-bought frosting, but I really recommend trying out this homemade version.
Banana Slice
- Baking Powder - 1 teaspoon of baking powder.
- Baking Soda - 1 teaspoon of baking soda.
- Spices - ½ teaspoon each of salt, ground cinnamon, and ground nutmeg.
- Sugar - 2 cups of granulated sugar.
- Eggs - 3 large room-temperature eggs that have been beaten.
- Milk - 1½ cups of room temperature milk. I used whole milk, but you can use your preferred kind.
- Bananas - 1½ cups of mashed overripe bananas. This is the same as about 3 large or 4 medium-sized bananas. The riper, the better! (*See notes for instructions on how to ripen your bananas quickly).
- Butter - ¾ cup of salted butter, melted.
- Self-Rising Flour - 3½ cups of self-rising flour, spooned and leveled.
Lemon Cream Cheese Frosting
- Cream Cheese - One 8-ounce block of cream cheese that is softened at room temperature.
- Butter - ½ cup of butter (1 stick) that is softened at room temperature.
- Powdered Sugar - 3 cups (or more, if needed) of confectioners sugar.
- Lemon Juice - 2 tablespoons of lemon juice. You can use fresh or bottled.
- Lemon Zest - ½ tablespoon of lemon zest.

🔪 How To Make A Banana Slice
This easy cake uses a one-bowl method so that you won't have a ton of dishes to clean when you're done baking! Go ahead and grab a large mixing bowl, a silicone spatula, your measuring utensils, a 9x13 baking dish, and your hand mixer for making the frosting.
This recipe will make one 9x13 banana slice, which can be divided into 16 servings. If you want to double the recipe, you'll need to use two separate 9x13 pans.
Prepare The Banana Cake
- Preheat. Preheat your oven to 325°F (160°C) and lightly grease a 9x13 baking dish.
- Mix. In a large mixing bowl, add 1 teaspoon (4 grams) each of baking powder and baking soda, ½ teaspoon (3 grams) of salt, ½ teaspoon (1 gram) of both ground cinnamon and ground nutmeg, 2 cups (400 grams) of sugar, and the beaten 3 large eggs (150 grams). Mix until well combined.
- Stir. Add 1½ cups (355 milliliters) of milk and mix thoroughly for 1 minute.
- Finish mixing. Add the mashed 1½ cups (225 grams) of bananas and the melted ¾ cup (170 grams) of butter and mix well. Then add 3½ cups (438 grams) of self-rising flour and mix only until the batter is combined and smooth.
- Bake. Pour the batter into the prepared baking dish and then bake it in the oven at 325°F (160°C) for 50-60 minutes, or until cooked all the way through and a toothpick inserted into the cake comes out clean.
- Cool. Remove the banana slice from the oven and let it cool completely before adding the frosting.
Make The Lemon Cream Cheese Frosting
- Mix. Beat together 8 ounces (227 grams) of cream cheese and ½ cup (114 grams) of butter until smooth. Then mix in 3 cups (360 grams) of confectioners sugar, 2 tablespoons (30 milliliters) of lemon juice, and ½ tablespoon (3 grams) of lemon zest until creamy and well-combined.
- Frost. Spread the frosting evenly onto your cooled banana slice and then serve immediately.
🍴 What To Serve With Cake

- If you don't have overly ripe bananas on hand, you can place the bananas (with the peel still on) onto a baking sheet lined with foil and bake them in the oven at 300°F (150°C) for 15-20 minutes or until they are completely black in color. Let the bananas cool before peeling and mashing them.
- You'll want to use ingredients that are at room temperature in order to ensure even baking. Additionally, the butter and cream cheese needs to be softened to room temperature so that they can be creamed together properly.
- You can check your banana slice for doneness by poking a toothpick or knife into the center of the cake. When removed, it should be clean except for a few moist crumbs (no batter should be clinging to it).
- Your frosting could use 3-4 cups of powdered sugar, depending on if you want the consistency to be pipe-able or spreadable.

Keep your banana slice stored in the cake in either an airtight container or covered tightly with plastic wrap for up to 5 days.
Freezing A Banana Slice Cake
For best results, freeze your banana slice before you add the frosting. You can wrap either the entire cake or individual slices in plastic wrap followed by a layer of foil. They can be frozen for up to 3 months. When ready, thaw the cake in the fridge overnight and then add the lemon cream cheese frosting.

The riper the bananas, the better. In fact, your bananas could be completely black and be perfect for this cake (as long as there is no mold)! The darker the peel is, the more sweetness that the fruit will contribute to your banana slice.
If you want to mix it up, you could stir in some chocolate chips or chopped walnuts for a tasty variation of this delicious cake!
