Easy Baked Chuck Steak
This baked chuck steak recipe has a fantastic beefy and rich flavor that counterparts more expensive and fancier cuts of beef! With a few simple ingredients, you can have a transformed steak that won't break the bank!
A boneless chuck steak is generously seasoned with my homemade steak seasoning full of savory spices and dried herbs. Then the steak is pan-seared in beef tallow on a cast iron skillet to get a flavorful caramelized crust before it's finished in the oven!

🥘 Baked Chuck Steak Ingredients
All it takes is two simple ingredients to cook up a delicious steak that is packed full of beefy and savory flavor! If you don't have any beef tallow available (although I highly recommend using it), you can substitute it for extra virgin olive oil.
- Beef Tallow - ½ tablespoon of beef tallow.
- Chuck Steak - 8 ounces of chuck steak.
- Steak seasoning - ½ tablespoon of my homemade steak seasoning (to taste). You can also use your favorite brand of steak seasonings if you'd like.

🔪 How To Make Baked Chuck Steak
Cooking a baked chuck steak is perfect for beginners since there is light preparation and only 3 ingredients to work with! Take out a cast iron skillet (or another heavy-bottomed pan), some measuring spoons, and a meat thermometer to get started.
This recipe will yield 1 serving. If you're needing a larger amount, you can cook more steaks if you work in batches!
- Prep. Heat a cast iron skillet (or any oven-safe, heavy-bottomed pan) over high heat with the ½ tablespoon of beef tallow and preheat your oven to 400°F (205°C).
- Season. Use a few paper towels to pat dry your 8 ounces of chuck steak and then season it liberally on all sides with the ½ tablespoon of steak seasoning.
- Sear steak. Place your steak into the cast iron skillet and sear it for 2-3 minutes on each side. Quickly sear the edges by lifting and turning the steak with kitchen tongs.
- Bake steak. Open your preheated oven and place the skillet with the steak on the center rack and bake the steak for 10-15 minutes at 400°F (205°C). Use a digital meat thermometer to check the internal temperature of the steak to make sure it's cooked to your preference. *See notes
- Rest and serve. When your chuck steak is done cooking, move it to a plate to rest at room temperature and cover it with a loosely tented piece of aluminum for at least 5 minutes before you serve.

- Let your chuck steak rest for about an hour prior to cooking if you can.
- Season your steak as you are letting it rest or the night before. This is called a 'dry brine' and will give you the best flavor results.
- To determine whether your steak is done, use a digital meat thermometer. Take the meat out of the oven around 5°F before your preferred temperature. Your steak will continue to warm up as it's resting- this is termed "carryover cooking".
- Rare: 115-120°F (46-49°C)
- Medium-Rare: 120-125°F (49-52°C)
- Medium: 130-135°F (54-57°C)
- Medium-Well: 140-145°F (60-63°C)
- Well: 150-155°F (66-68°C)
🥡 Storing & Reheating
Place any leftover steak in a sealed container or a storage bag in your refrigerator and eat within 3 days. To freeze, wrap the leftovers in plastic wrap and store it in a freezer-safe container or heavy-duty plastic bag. Eat within 3 months. Thaw your frozen steak in the refrigerator overnight before reheating.
Reheating Baked Chuck Steak

❓ Recipe FAQs
No, you do not have to cover your chuck steaks while they are cooking in the oven because the cooking time isn't long enough to where the heat would dry out the steak.
A chuck steak comes from a large section of the upper shoulder of a cow. It's an inexpensive cut of meat that's underrated compared to other cuts of steak. With proper cooking, it's actually one of the most tender and juicy cuts of beef and it tastes similar to ribeye steaks! The cooking time will depend on how you prefer your steaks to be cooked. After you sear the chuck steak, the baking time will be between 10-15 minutes. Rare-medium rare will be around 10-11 minutes and a well-done steak will take the whole 15 minutes. See my notes for the internal temperature ranges and use your digital thermometer for the most accurate results.
