Marry Me Chicken

Marry Me chicken is an incredibly easy one-skillet meal that's quick enough to make for dinner any day of the week! Thinly sliced chicken breast is covered with a creamy Parmesan and sun-dried tomato sauce that is so delicious you'll want to get down on one knee in front of whoever cooked it. Chicken With Sun-Dried Tomatoes

Once you try Marry Me Chicken, it will become abundantly clear where the dish got its name. It's almost impossible to believe that a recipe this simple can have so much flavor!

🥘 Ingredients

None of the ingredients are difficult to find, and they are all fairly inexpensive. You could use chicken cutlets instead of pounding out a full chicken breast.

  • Chicken Breast - 1 ½ pounds of boneless, skinless chicken breast.
  • Salt & Pepper - ¼ teaspoon each, to season the chicken.
  • Olive Oil - 1 tablespoon of extra virgin olive oil (EVOO).
  • Butter - 3 tablespoons; use high-fat butter for best results, such as European brands like Kerrygold or Plugra.
  • Garlic - ¼ teaspoon of minced garlic.
  • All-Purpose Flour - 3 tablespoons.
  • Chicken Broth - 1 cup.
  • Heavy Cream - ¾ cup.
  • Parmesan - ½ cup, freshly grated.
  • Sun-Dried-Tomatoes - ½ cup, drained. You may want to chop your tomatoes into smaller pieces based on your personal preferences.
  • Italian Seasoning - 1 ½ teaspoons.
  • Fresh Basil (optional) - For garnish.

🔪How To Make Marry Me Chicken

This recipe is so simple you can make it all in one skillet. You will also need a knife or meat mallet and a whisk.

  1. Thin out the chicken. Slice or pound 1 ½ pounds of chicken breasts so that they are thinner and will cook more evenly. Combine ½ a teaspoon of salt with ¼ teaspoon of pepper and season the chicken breasts on both sides.
  2. Cook. Heat 1 tablespoon of olive oil over medium-high heat in a large skillet. Once hot, add the chicken breasts and cook for 5 minutes on each side, or until it is just under fully cooked(the chicken will cook more later). Set aside.
  3. Saute. Add 3 tablespoons of butter to the same skillet. Once it has melted, add the 2 teaspoons of minced garlic and saute for 30 seconds or just until fragrant. Then, mix in 3 tablespoons of flour and continue to mix until a paste is formed. Cook this roux to get rid of the flour taste, stirring for a minute or two.
  4. Make sauce. Whisk in 1 cup of chicken broth, ¾ cup heavy cream, and ½ a cup of grated Parmesan cheese. Continue whisking until thoroughly combined, then stir in ½ cup of sun-dried tomatoes and 1 ½ teaspoons of Italian seasoning. Taste the sauce and add salt & pepper if necessary.
  5. Simmer. Let the sauce simmer until thickened, usually about 3-4 minutes. Then, return the chicken to the skillet and reduce the heat to medium-low. Simmer for 10 minutes.
  6. Serve. Remove from heat, garnish with chopped parsley or fresh basil if desired, and serve immediately.

Marry Me chicken is incredible when served over some buttered noodles or white rice. You could also try some crusty garlic bread to soak up all the creamy sauce. Enjoy!

💭 Angela's Pro Tips & Recipe Notes

  • The fresh basil is optional, but it is an ideal addition as it adds a lovely flavor.
  • The thinner the chicken, the faster it cooks. When the juices run clear, and it has a minimum internal temperature of 165° F (74°C), it's ready.
  • Storing: Leftover Marry Me chicken should be kept in a shallow airtight container and refrigerated for 3 days. It does not freeze well. Reheat in the microwave or on the stovetop over medium heat just until the chicken is heated through.

Ingredients
 

  • 1 ½ lbs chicken breast (boneless, skinless)

Instructions
 

  • Slice or pound the chicken breasts so that they are thinner and will cook more evenly. Then, season each side of the chicken with salt and pepper.
  • Heat the olive oil over medium-high heat in a large skillet. Once hot, add the chicken and cook for 5 minutes on each side, or until it is just almost fully cooked (the chicken will cook more later). Transfer the chicken to a plate and set aside.
  • Add butter to the same skillet. Once it has melted, add the garlic and saute for 30 seconds or just until fragrant. Add the flour and mix until a paste is formed.
  • Whisk in the chicken broth, heavy cream, and Parmesan cheese. Continue whisking until thoroughly combined, then stir in the sun-dried tomatoes and Italian seasoning. Taste sauce and add salt & pepper if necessary.
  • Simmer the sauce until thickened, about 3-4 minutes. Then, return the chicken to the skillet. Reduce the heat to medium-low and simmer for 10 minutes.
  • Serve over warm pasta or white rice and garnish with fresh basil, if desired.

    This was delicious !
    I substituted tomato paste for the sun dried tomatoes as I didn't have any and the flavor was wonderful! While eating, husband said multiple times, "We need to have this again."
