Honey syrup is such an underrated condiment that I truly believe everyone should have in their fridge! What makes it special is that it can be added to cold recipes and beverages (while pure honey would not dissolve).
It can be used in practically anything you like, from drinks to desserts. I add it to anything where I want to incorporate a sweet honey flavor!

🥘 Honey Syrup Ingredients
This recipe only uses two ingredients: honey and water! Of course, you can add some spices or herbs to alter the flavors if you like (check out the variations listed below!)
- Honey - ½ cup of honey. You can use any kind of honey you like. For a sweeter or thicker syrup, increase the amount of honey you use.
- Water - ½ cup of water.

🔪 How To Make Honey Syrup
All you have to do for this condiment is heat up the mixture and stir until the honey is dissolved! You're going to need a small saucepan, a wooden spoon, and a liquid measuring cup.
This recipe will yield 1 cup of honey syrup, which can be used in 10 servings.
- Prepare. Place a small saucepan over medium heat and add ½ cup of honey and ½ cup of water.
- Dissolve. Cook, stirring frequently, until all of the honey has dissolved.
- Cool. Remove the pot from the heat and let it cool completely before using or storing it for later.
🍴 How To Use Honey Syrup
Honey syrup is incredibly versatile! Try it out in your favorite cocktails (such as an old-fashioned cocktail or whiskey sour), coffees, and teas, or use it in marinades and vinaigrettes. It can even be added to desserts or recipes like my Greek yogurt fruit salad! Enjoy!

- This recipe uses a 1:1 ratio of honey to water. However, you can easily add more honey to suit your tastes (up to 1 cup). Using more honey will make the syrup sweeter and thicker.
- The water only needs to be warm enough to dissolve the honey. You don't need to bring it to a boil.
- Honey syrup can be used in many different cocktails (you can use it as a substitute for simple syrup), in coffee, or added to tea. You can also use it for marinades, vinaigrettes, and sauces. It can even be used as a sweet glaze for baked goods!
- You can infuse your honey syrup with different herbs and spices such as cinnamon, vanilla, ginger, or lemon zest.
📖 Variations
Honey syrup is perfect as-is, but you can also add some flavor variations to suit whatever recipes you may be using it with!
- Cinnamon Honey Syrup - While cooking, add a few cinnamon sticks to the pot. After the syrup has cooled completely, remove the cinnamon sticks before storing your syrup.
- Vanilla Honey Syrup - Add 1 teaspoon of pure vanilla extract to your mixture. Or, you can use a vanilla bean that has been split open (but discard the bean before storing the syrup).
- Lemon Honey Syrup - Add the zest of 1 lemon while cooking. Strain your syrup before storing it.
- Ginger Honey Syrup - Add a few slices of fresh ginger. Strain before storing your syrup.
- Lavender Honey Syrup - Stir in 1 tablespoon of dried lavender (make sure it is food-grade). Strain before storing it. This variety is perfect for iced teas and lemonades.
- Mint Honey Syrup - Add a handful of fresh mint leaves while cooking, then strain before serving. Use this variety in mojitos or other minty drinks.
- Spiced Honey Syrup - Add warm spices, such as whole cloves, cardamom, and star anise. Once cool, strain the syrup before storing it. This variation is great for fall and winter cocktails.
- Rosemary Honey Syrup - Add 1-2 sprigs of fresh rosemary while cooking and then strain before storing it. This version pairs fantastically with gin and grapefruit.
- Chili Honey Syrup - Add a pinch of chili flakes to your mixture, then strain before storing it.
- Earl Grey Honey Syrup - While cooking, steep a bag of Earl Grey tea in the mixture. Discard the tea bag after removing the pot from the heat.

Let your honey syrup cool completely before transferring it to a clean jar or container. It can be kept in the refrigerator for 1 month.

Yes. For an added honey flavor, you can swap out simple syrup for honey syrup in a 1:1 exchange. Go ahead and experiment with all of your favorite cocktails!
Honey syrup can easily be mixed into cold drinks and recipes. If you were to use pure honey, it would not dissolve and could solidify. However, pure honey can easily be stirred into warm beverages.
You can use any type of honey you like! Keep in mind that different varieties of honey will slightly alter the flavor of your syrup.

How do you know when Honey is DISSOLVED??

Honey is dissolved when it no longer clings to your spoon or spatula. When there are no clumps of honey in the water, it is dissolved. Once you make this, you should easily see the 'syrup' consistency come together.
