There are a million reasons to keep frozen cookies on hand, in addition to holiday baking. They make a great addition to any potluck or get-together, they are perfect for gifting, or sometimes you simply crave your favorite homemade cookie!
Maybe you have a special occasion coming up and you know you won't have time to make a fresh batch the day of. Not to worry, each of the cookie recipes below can be made months in advance and frozen until you need them!

Below are my absolute favorite freezer-friendly cookie recipes. Each of these cookies will taste like they were freshly made once they thaw out!
1. Gumdrop Cookies
Wonderfully chewy and soft, these gumdrop cookies are always a favorite! There's no need to decorate them, these brightly colored candies are easy to customize for any occasion!
You can freeze these cookies for up to 3 months and thaw them on the counter when you're ready to enjoy them!
2. No Bake Cookies
These chocolate no-bake cookies are so easy to make that anyone can do it! This classic recipe does not call for peanut butter, all you need is sugar, butter, milk, cocoa, vanilla, oats, and coconut.
If you are missing the peanut butter, I have a recipe for no-bake peanut butter cookies as well (and they freeze wonderfully, too)!
3. Bailey’s Irish Cream Chocolate Chip Cookies
These chocolate chip cookies have an extra special secret ingredient: Bailey's Irish Cream liqueur! It adds a subtle creamy flavor that makes these cookies even more indulgent.
They are perfect for St. Patrick's day, though we like to enjoy them all year long! Freeze them in a freezer bag with parchment paper between the layers of cookies and enjoy within 3 months.
4. Almond Flour Peanut Butter Cookies
Even gluten-free cookies can be frozen! These almond flour peanut butter cookies are deliciously soft and can be whipped up in less than 20 minutes.
Freeze these cookies on a parchment paper-lined baking sheet, then transfer them to a heavy-duty freezer bag. They last up to 6 months!
5. Oatmeal Raisinet Cookies
These oatmeal cookies are full of everyone's favorite chocolate-covered raisin candy! They freeze like a dream, so long as you layer some parchment paper between them before placing them in the freezer.
Thaw your oatmeal Raisinet cookies on the counter for 30 minutes before eating.
6. Sprinkle Crinkle Cookies
What's not to love about soft vanilla cookies full of sprinkles? I opted for green and red for the holidays, but you can make these with any color you like!
In an airtight container, these cookies will freeze for up to 3 months!
7. Italian Ricotta Cookies
These classic Italian holiday cookies are delightfully tender with a slight tang from the ricotta cheese. The cookies freeze wonderfully, just be sure not to frost them until you are ready to serve them!
Start by freezing the cookies on a baking sheet until fully frozen. Then transfer them to a heavy-duty freezer bag for up to 3 months!
8. Small Batch Chocolate Chip Cookies
Sometimes you just crave a homemade chocolate chip cookie. This one-bowl recipe is my go-to when my sweet tooth hits!
These slightly crunchy, slightly chewy, chocolate chip cookies can be kept frozen for up to 3 months. It's a good idea to put wax or parchment paper between the cookies so they don't stick together.
9. Christmas Cookies
These Christmas cookies are perfect for gifting! The sugar cookie frosting freezes just as well as the cookie does, so I often make a few batches to keep on hand.
Once the frosting has hardened fully, layer the cookies with parchment paper between them and place them in a storage container or freezer bag. Thaw them on the counter and enjoy them within 3 months!
10. Matcha Cookies
If you enjoy matcha, you'll love the rich flavor of these green tea cookies! These cookies are a striking green color with a tender/crisp texture you are sure to love.
Freeze the baked cookies or balls of dough with parchment paper between them for up to 3 months. Thaw them out at room temperature before baking or eating.
11. Peanut Butter Pecan Cookies
These classic peanut butter cookies are topped off with a chunk of crunchy pecan to make an addictively tasty cookie! The cookie itself is nice and chewy, the perfect contrast to pecans.
To freeze, pop the cookies into the freezer on a baking sheet. Once frozen, transfer them to a freezer bag and they will keep for 3 months.
12. Pumpkin Chocolate Chip Cookies
These chocolate chip pumpkin cookies taste like a delicious chocolate pumpkin pie. They are full of warm fall flavor from the pumpkin puree and pumpkin pie spice.
Once cooled, place your pumpkin cookies in a freezer bag and freeze for up to 2 months. Placing wax or parchment paper between the cookies will help to keep them from sticking together.

Classic sugar cookies are great for any occasion! You can make a variety of shapes and frost them however you like.
Be sure to freeze your sugar cookies before frosting them. Freeze them in an airtight container or Ziploc bag with parchment or wax paper between each layer. Enjoy within 3 months!

Buttery cinnamon sugar snickerdoodle cookies are always a crowd favorite. These soft, sweet cookies are a must-have at holiday parties or get-togethers.
Freeze the dough or the baked cookies in an airtight container for up to 2 months. You can thaw them out on the counter, but they are also tasty frozen!

Peanut butter banana cookies are my favorite way to use overripe bananas. The banana keeps the cookie delectably moist and the flavor combination is classic.

Simply place the cooled cookies on a baking sheet and freeze. Then transfer them to a Ziploc freezer bag for easy storage for up to 3 months!
18. Melting Moments
Melting moments are so buttery and soft that they practically melt in your mouth (hence the name). They make for a fabulous holiday cookie, but there's no need to reserve them specifically for Christmas.
These 4-ingredient cookies are easy to make in advance! Just freeze them in a Ziploc bag with parchment paper between the layers of cookies so they don't stick together when they thaw out. They will last for 2-3 months!
19. Almond Flour Chocolate Chip Cookies
These chocolate chip cookies are low-carb and gluten-free! They are sweetened with molasses so there is some sugar, but compared to a traditional cookie these are mostly guilt-free!
For easy storage, I prefer to freeze them on a baking sheet and then transfer them to a freezer bag. They will last for 6 months when frozen!

Cookies That Freeze Well: Gumdrop Cookies (+More Tasty Cookie Recipes To Bake In Advance!)
Ingredients
- ¾ cup butter (or a blend of ½ cup butter and ¼ cup shortening is my preferred ratio)
- 1 cup sugar
- 1 large egg (at room temperature)
- ½ teaspoon almond extract (or 1 teaspoon vanilla extract)
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 ¾ cups all-purpose flour
- 1 cup gumdrops (chopped)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet(s) with parchment paper or a silicone baking mat.
- In a large mixing bowl or the bowl of your stand mixer cream together the butter (or butter and shortening blend) with granulated sugar until light and fluffy, about 1 minute. Beat in the egg and almond extract until well combined, then mix in the baking soda and salt.
- Gradually mix in the flour until the dough is smooth, then fold in the chopped gumdrops until they are evenly distributed throughout the dough.
- Drop the cookies onto your prepared baking sheet in tablespoon portions, leaving 2-inches of spacing between the cookies.
- Bake at 350°F (175°C) for 10-14 minutes, or until the bottoms of the cookies are just beginning to turn a light golden brown. Remove from the oven and allow to cool on the baking sheet for 2-3 minutes before transferring the cookies to a wire cooling rack to cool completely.
Notes
- Kitchen shears are best for chopping gumdrops. Let the cut pieces drop into a small plate of sugar to coat the sticky side so that the cut pieces don't stick together. I like to do this before beginning any of the other steps so that they are ready to drop in the dough and mix.
- I've baked these cookies as balls, drop cookies, and the way I like them best - a slightly flattened shape after forming the 1-inch round balls (about 1 heaping tablespoon portion each).
- Leave the cookies on the baking sheet. The gum drop cookies will continue to cook a bit while sitting on the baking sheet.
- You may make the cookie dough in advance by forming it into a ball or disc and wrapping it tightly in plastic wrap. Keep the ball of dough in the refrigerator for a few hours or overnight. *I suggest baking within 24 hours for the freshest cookies.
- Store gumdrop cookies in an airtight container at room temperature for up to a week.
- Wrap bundles of the gumdrop cookies in plastic cling film then store in an airtight container or freezer storage bag to freeze for up to 3 months.
