Instructions
Preheat your oven to 350°F (175°C/Gas Mark 4) and line a baking sheet with parchment paper or a silicone baking mat.
Cream together ½ cup butter, ¾ cup light brown sugar, and ¼ cup sugar in a mixing bowl or the bowl of your stand mixer until fluffy and light, about 1-2 minutes.
Mix in 1 large egg, ½ cup creamy peanut butter, and 2 teaspoon vanilla extract until combined. Then, add 1 cup all-purpose flour and ½ teaspoon baking powder and mix just until combined (do not over-mix). Stir in 1¼ cup old-fashioned rolled oats until evenly distributed.
Gently fold 1 cup of your 1½ cups Christmas M&Ms and ½ cup of your ¾ cup white chocolate chips into the cookie dough.
Portion out the dough into balls roughly 2 tablespoons in size. Pour ⅓ cup Christmas sprinkles into a shallow dish or plate and press the top of each cookie dough ball into the sprinkles.
Then, take the remaining ½ cup of M&Ms and ¼ cup of white chocolate chips and gently press some of each into the top (the sprinkle side) of each cookie dough ball.
Place the cookie dough balls on your prepared cookie sheet with 2 inches of space between each cookie and put it on the center of the middle rack in your oven. Bake until the edges of the cookies are lightly browned, around 11-13 minutes.
Remove them from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire cooling rack to finish cooling completely.
Notes
Notes:
You may substitute the white chocolate chips for traditional semi-sweet chocolate chips or any other flavor.
To give these cookies as gifts, you can package them in gift tins, place them on a festive paper plate, and wrap them up in colored cellophane, or put them in Glad® Holiday Edition plastic containers!
You can make the dough up to 1 month in advance and freeze it. Just follow the directions all the way up to baking them and place them in a single layer in a few heavy-duty freezer bags. Freeze for up to 1 month. Keep in mind that the color from the M&Ms may spread. Also, be sure to thaw them in the fridge before baking because the frozen cookie dough will not spread as it should.
Storage:
You may keep leftover Christmas monster cookies in an airtight container at room temperature for up to 5 days.
You can also freeze them by placing parchment paper between each layer of cookies and putting them in a heavy-duty freezer bag. Thaw them at room temperature and enjoy them within 2 months.
