💠Tips For Baking The Best Turnovers
The key to amazing turnovers is getting the pastry dough golden, light, and flaky and pairing it with a flavorful filling. Here are a few of my techniques, tips, and tricks to try the next time you're making turnovers:
- Use quality dough: Whether you're using store-bought puff pastry or making your own dough from scratch, make sure it's a quality dough that bakes up golden and flaky!
- Keep the dough cold: Keep your pastry dough cold until the oven is preheated and you're ready to fill and bake! The dough will become tacky and won't bake up as nicely when warm (pop it in the fridge for a while if it has warmed too much).
- Seal the edges: You need to seal the edges of your turnovers well to keep the filling from leaking out during baking. I use a fork to crimp the edges together, or you can gently press and twist them together.
- Release the steam: Cut small slits or poke a couple of holes in the top of each turnover to let the steam escape during baking. It helps keep them from becoming soggy or from bursting!
- Chill before baking (optional): For extra flaky pastries, let the assembled turnovers chill in the fridge for 15-30 minutes before baking.

Best Turnovers Recipes: Puff Pastry Apple Turnovers (+15 More Baked Turnovers!)
Ingredients
Apple Turnovers
- 17.3 oz puff pastry (1 17.3-ounce sheet, thawed)
- 21 oz apple pie filling (1 21-ounce can)
- 1 egg (beaten, +1 teaspoon water)
Vanilla Glaze
- 1 cup confectioners' sugar
- 2 tablespoon milk
- 1 teaspoon vanilla extract
Instructions
Apple Turnovers
- To get started, preheat your oven to 400°F (205°C). Line a baking sheet with parchment paper.
- Roll out your sheet of thawed puff pastry dough and then cut it into 4 squares.
- Next, scoop roughly 3 tablespoons of apple pie filling into each puff pastry section (*see note).
- Add your egg and water to a small mixing bowl and beat it lightly. Next, brush your egg wash onto 2 of the edges of the puff pastry (making an "L" shape) so that they can be folded over and sealed together, forming a triangle. Use a fork to press the edges together.
- Place your prepared apple turnovers onto the parchment paper-lined baking sheet. Bake at 400°F (205°C) for 20-25 minutes, or until they have a nice golden brown color.
- Remove the baked turnovers from your oven and allow them to cool before adding the vanilla glaze.
Vanilla Glaze
- In a small mixing bowl, combine the milk, powdered sugar, and vanilla extract. Stir to combine (*see note).
- Adjust the thickness of the glaze by adding more milk or powdered sugar until it has reached your desired consistency.
- Once satisfied with the glaze, drizzle it over the cooled apple turnovers.
Notes
- You can dice the apple pie filling into smaller chunks so that you can fit more filling in each turnover. Otherwise, you can only fit 2-3 apple pieces in each one (depending on size).
- When making the vanilla glaze, start with only 1½ tablespoons of milk so that you can easily adjust the consistency to your liking.
- A tasty optional glaze ingredient that you can add is a ¼ teaspoon of ground cinnamon.
- To store: Your turnovers can keep at room temperature for a couple of days. If you happen to still have leftovers, place your apple turnovers into an airtight container and keep them in the fridge for up to 5 days.
- To freeze: You can freeze filled, unbaked apple turnovers for up to one month. Let them thaw out overnight before baking.
