🥘 Ingredients
If you're like me and love making breakfast, you likely have most of these ingredients already! If not, a quick trip to the grocery store may be needed.
- Bacon - 4 thick-cut bacon strips.
- Breakfast Sausage - 1 pound of breakfast sausage. You could use hot sausage if you like things spicy!
- Frozen Tater Tots - 1 ½ pounds frozen tater tots (you will need between 16-24 ounces).
- Eggs - 12 large eggs (at room temperature).
- Milk - ½ cup milk (at room temperature).
- Chives - 1 tablespoon of freeze-dried chives (or fresh).
- Salt & Pepper - ½ teaspoon of each, salt & pepper (to taste).
- Onion Powder - ½ teaspoon of onion powder.
- Cheddar Cheese - 3 cups of shredded cheddar cheese. Freshly shredded cheese will melt best!

🔪 How To Make Tater Tot Breakfast Casserole
With a prep time of only 5 minutes, this casserole is beginner-friendly! Take out a skillet, measuring cups, a 9X13 baking pan (or a 2.5-quart casserole dish), and a small mixing bowl to begin.
This tater tot casserole yields around 10 servings. There is plenty to share with a hungry crowd or meal prep for a few days!
- Prep. Preheat your oven to 350°F (175°C) and lightly grease your 9x13 pan or 2.5-quart casserole dish.
- Cook bacon. In a large frying pan, cook the 4 pieces of bacon over medium-high heat until browned and crisp. Set aside and drain on paper towels until cooled slightly, then chop into small pieces while the sausage cooks.
- Cook sausage. Drain the excess grease from your skillet and add the 1 pound of pork sausage. Cook until browned, crumbling as it cooks, and then set aside.
- Assemble the first layer. While the sausage cooks, spread an even layer of 1 ½ pounds of frozen tater tots in your prepared baking dish.
- Add ingredients. Beat the 12 large eggs, ½ cup of milk, 1 tablespoon of chives, and seasoning together. Add the cooled sausage, about half of the chopped bacon, and half of the shredded cheese, then stir to combine.
- Bake. Pour egg mixture over tater tots and bake at 350°F (175°C) for 30 minutes, then remove from the oven and add the remaining shredded cheese and chopped bacon. Continue cooking for an additional 10-15 minutes until the eggs are fully set in the center of your casserole.
- Cool and serve. Remove from oven and allow to cool slightly before slicing and serving.

- Sausage Selection: Feel free to use pork breakfast sausage for this recipe. Ground pork sausage from your local grocery store or butcher and various types of Jimmy Dean brand sausage (Hot, Mild, Country Mild, Regular, Maple), including their patties or links, are all suitable. If using patties or links, cook them per the package instructions, then chop them into small pieces for the casserole.
- Room Temperature Ingredients: For optimal cooking, use room-temperature ingredients. This ensures that your casserole cooks quickly and evenly. Begin by setting out your ingredients to warm slightly as you prepare the dish's other components.
- Quickly Warming Eggs: To quickly bring refrigerated eggs to room temperature, place them in a bowl of warm (tepid, not hot) water for about 5 minutes. This little trick can speed up the process and help your casserole bake more evenly.

To reheat preheat your oven to 350°F (175°C) and place your leftovers in an oven-safe dish. Cook for 15-20 minutes, or until the casserole is heated through. You can also microwave individual pieces in 30-second increments until heated through to your liking.
