Sheet Pan Chicken Fajitas our favorite go-to one pan quick and easy family dinner!

These sheet pan chicken fajitas are great for any night of the week, and they are super handy when you need a quick, healthy meal in a hurry! Chicken is thinly sliced alongside some fresh peppers and onions and then tossed in some bold seasonings! Simply bake it all in the oven, and you are ready to eat!

Easy Sheet Pan Chicken Fajitas Recipe

These fajitas are a fabulous dinner to make in a pinch, as all they require is a few minutes of prep and a large baking sheet! What could be better than a meal that is quick and easy to make, PLUS it's a snap to clean up after too?!

Every parent has their go-to meals for those nights when time is short and you just really don't have the energy to be in the kitchen afterward cleaning up all night too. This meal is one of 'those' for me!

🥘 Sheet Pan Chicken Fajitas Ingredients

Chicken, peppers, and onion are the staple ingredients of these sheet pan fajitas. However, you'll also want some spices to add a ton of yummy flavor!

  • Chicken Thighs - 1 pound of boneless, skinless chicken thighs cut into strips.
  • Bell Peppers - 3 large bell peppers, cut into strips. I used red, yellow, and orange, but you can use your favorite variety!
  • Onion - ½ of a large yellow onion, cut into strips.
  • Chili Powder - ½ teaspoon of chili powder.
  • Cumin - 1 teaspoon of cumin.
  • Paprika - 1 teaspoon of paprika.
  • Garlic - 1 teaspoon (or 1 clove) of garlic, minced.
  • Oregano - 1 teaspoon of oregano.
  • Cilantro - ¼ cup of chopped fresh cilantro.
  • Chipotle Pepper - 1 chipotle pepper, finely chopped.
  • Lime - The zest and juice of one lime.
  • Olive Oil - 2 tablespoons of extra virgin olive oil.

🔪 How To Make Sheet Pan Chicken Fajitas

Sheet pan fajitas are even simpler to make than traditional fajitas since everything is just baked in the oven! You'll need a cutting board, a knife, your measuring spoons, and a baking sheet.

This recipe is for 6 servings of fajitas, so it is perfect for the whole family (or enjoying some yummy leftovers!)

  1. Preheat. Preheat your oven to 400ºF (205ºC).
  2. Prepare the ingredients. Spread 3 sliced bell peppers, ½ of an onion, and 1 pound of sliced chicken on a large baking sheet. Sprinkle seasoning over chicken, peppers, and onion: ½ teaspoon of chili powder and 1 teaspoon each of cumin, paprika, minced garlic, and oregano, ¼ cup of cilantro, and 1 chopped chipotle pepper.
  3. Toss. Zest 1 lime over your ingredients, then drizzle with 2 tablespoons of olive oil. Toss all of the ingredients to coat with seasoning and olive oil, then squeeze the lime juice over the fajita mix. Toss your ingredients again, then spread evenly on your baking sheet.
  4. Bake. Place your baking sheet of fajita mix into the oven and cook for 20 minutes at 400ºF (205ºC). Remove from the oven, move your fajita mix to one side, and place your desired number of tortillas in the remaining third of your baking sheet.
  5. Serve. Return the sheet pan to the oven and cook everything for an additional 5 minutes. Serve immediately.

Serve your sheet pan chicken fajitas with some yummy toppings such as guacamole or pico de Gallo! Add a side of Mexican rice and refried beans for a complete meal! Enjoy!

💭 Angela's Pro Tips & Recipe Notes

  • If you love fajitas, go ahead and make a big batch of some tasty fajita seasoning! Omit the other seasonings in the recipe and use 1 tablespoon of fajita seasoning per 1 pound of meat.
  • If you have a little extra time on hand, you can marinate your chicken in a tasty fajita marinade.
  • Make sure your veggies and chicken are cut into strips that are approximately the same size so that they will cook at the same rate.

🥡 Storing & Reheating

Allow the fajita mixture to cool completely before transferring it to an airtight container and storing it for up to 4 days.

Freezing Chicken Fajitas

For a simple make-ahead meal, you can prepare the meat and veggies and toss them into a storage bag and freeze it for up to 3 months. When ready, transfer the mixture to the fridge to thaw overnight and then bake it as directed!

If you want to freeze cooked chicken fajitas, let everything cool before placing it into a storage bag and freezing it for up to 9 months. Simply let it all defrost before reheating it.

Reheating Chicken Fajitas

Place your fajitas onto a baking sheet and reheat in the oven at 350°F (175°C) for 10-15 minutes or until hot.

Should I Cut Chicken For Fajitas Before Cooking?

Slicing the meat before cooking will help it to cook faster and evenly. Just make sure to cut all of the pieces the same size, and slice across the meat's grain for the chicken fajitas that are incredibly tender!

How Do You Know When Chicken Fajitas Are Done?

As with any meat, using a meat thermometer is the best and most accurate way of knowing when your chicken is done cooking. You'll want it to read 165°F (74°C).

Are These Sheet Pan Chicken Fajitas Spicy?

These fajitas have a ton of flavor but are not super spicy. However, you can easily adjust the spice level of your fajitas. To reduce the spice, you can omit the chipotle pepper. If you want some more heat, add a pinch of crushed red pepper flakes or cayenne pepper. You can also add any of your favorite peppers to the mix of veggies!

Ingredients
 

  • 1 lb chicken thighs (boneless, skinless - cut into strips)
  • 3 bell peppers (we use red, yellow and orange - cut into strips)

  • 1 tsp paprika

  • 2 Tbsp olive oil (extra virgin)

Instructions
