    Sheet Pan Chicken Fajitas

    We love making these crazy easy Sheet Pan Chicken Fajitas any night of the week, but they are super handy when you need a quick, healthy meal in a hurry!

    Sheet Pan Chicken Fajitas are a fast and easy one dish dinner, perfect for busy families!

    So easy and so delicious! These sheet pan chicken fajitas are a favorite quick dinner!

    These fajitas are a fabulous dinner to make in a pinch, as all they require is a few minutes of prep and a large baking sheet!

    What could be better than a meal that is quick and easy to make, PLUS it's a snap to clean up after too?! Nothing, really 🙂 Every parent has their go-to meals for those nights when time is short and you just really don't have the energy to be in the kitchen afterward cleaning up all night too. This meal is one of 'those' for me!

    This meal is so easy, that we're even going to place our flour tortillas on one side of the sheet pan and warm them up in the oven too! Enjoy!

    How To Make Sheet Pan Chicken Fajitas

    1. Preheat your oven to 400 ºF (205 ºC). Spread the sliced bell peppers, onion, and chicken on a large baking sheet. Sprinkle seasoning over chicken, peppers and onion: chili powder, cumin, paprika, garlic, oregano, cilantro and chopped chipotle pepper.
    2. Zest the lime over your ingredients, then drizzle with olive oil. Toss all of the ingredients to coat with seasoning and olive oil, then squeeze the lime juice over the fajita mix. (optional) Toss your ingredients again, then spread evenly on your baking sheet.
    3. Place your baking sheet of fajita mix into the oven and cook for 20 minutes. Remove from the oven, move your fajita mix to one side and place your desired number of tortillas in the remaining third of your baking sheet.
    4. Return sheet pan to the oven and cook everything for an additional 5 minutes. Serve immediately.

    Ingredients
     

    • 1 lb chicken thighs (boneless, skinless - cut into strips)
    • 3 bell peppers (we use red, yellow and orange - cut into strips)
    • ½ large yellow onion (cut into strips)
    • ½ teaspoon chili powder
    • 1 teaspoon cumin
    • 1 tsp paprika
    • 1 teaspoon garlic (minced)
    • 1 teaspoon oregano
    • ¼ cup cilantro (chopped)
    • 1 chipotle pepper (finely chopped)
    • 1 lime (zest & juice)
    • 2 Tbsp olive oil (extra virgin)
