Grab some beets and you should be good to go! Though completely optional, I love tossing the foil packet roasted beets in butter just before serving for added depth of flavor.
- Beets - 4 medium-sized beets cut into bite-sized pieces.
- Olive Oil - 2 tablespoons of extra virgin olive oil.
- Kosher Salt - ½ a teaspoon.
- Butter (optional) - 1 tablespoon for tossing the beets at the end of cooking.

This oven roasted beets recipe is super simple! Grab a knife and cutting board, a baking sheet, and 2 pieces of foil (you may want a mixing bowl for tossing the beets if you use the optional butter).
- Prep. Preheat your oven to 425°F (218°C) and scrub 4 medium beets clean with a vegetable brush under cold running water. Pat them dry and dice them into bite-sized pieces (no need to peel them).
- Create pouches. Place 2 squares of foil on a baking sheet and divide the beets between them. Drizzle them with 2 tablespoons of olive oil and season with ½ a teaspoon of Kosher salt. Then, fold the edges of the foil up and over the beets, creating a pouch or packet.
- Roast. Roast your beets in the oven for 45-60 minutes depending on how small or large you diced your beets.
- Serve immediately. Toss the beets with 1 tablespoon of butter right before serving, if desired.

- Washing your beets is essential! They are a root vegetable that holds on to a lot of dirt, and since you won't be peeling them you certainly don't want to eat it!
- Beet juice will stain anything and everything it comes into contact with. This includes your hands, clothes, and cutting board. A thin layer of oil or non-stick cooking spray on your cutting board will prevent the wood from absorbing any beet juice so you can simply rinse it off.
- Storing: Cooked beets can be refrigerated in an airtight container for up to 5 days and easily reheated in the microwave.
