🥘 Ingredients

These are all common herbs and spices I usually have on hand already. As always, I suggest adding salt and pepper to taste so you can get it just right.

  • Garlic Powder - 2 teaspoons of garlic powder.
  • Dried Parsley - 2 teaspoons of dried parsley (or a dried parsley substitute).
  • Dried Oregano - 2 teaspoons of dried oregano (or a dried oregano substitute).
  • Dried Rosemary - 1 ½ teaspoons of dried rosemary (or a  dried rosemary substitute)
  • Dried Basil - 1 ½ teaspoons of dried basil (or a  dried basil substitute).
  • Fennel Seed - 1 ½ teaspoons of fennel seed (or a  fennel seed substitute).
  • Salt & Pepper - 1 teaspoon each, salt & pepper (to taste).

🔪 How To Make Porketta Seasoning

Making porketta seasoning is as easy as combining the ingredients. Grab some measuring spoons, a small mixing bowl, and if needed, a spice grinder (*see note).

One batch/serving of this porketta seasoning will season a 4-5 pound pork roast.

Step 1: Measure the ingredients. Measure out all of the porketta seasoning ingredients. (2 teaspoons of garlic powder, 2 teaspoons of dried parsley, 2 teaspoons of dried oregano, 1 ½ teaspoons of dried rosemary, 1 ½ teaspoons of dried basil, 1 teaspoon each, salt & pepper, 1 ½ teaspoons of fennel seed).

Step 2: Combine. Add everything to a small mixing bowl and stir to combine.

Step 3: Use or store. Use your homemade porketta seasoning right away or store it in an airtight jar to be used later.

I used this seasoning to make an Instant Pot porketta roast, but it would be equally delicious on a pork shoulder butt roast or slow cooker pork ribeye roast.

💭 Angela's Pro Tips & Recipe Notes

  • This recipe yields 3.83 tablespoons of porketta roast seasoning.
  • Use one full batch to season a roast 4-5 pounds in weight. Start with only half if you're usually shy about aggressively seasoning your roasts or unfamiliar with the flavor of fennel seed.
  • If you don't like the texture of whole fennel seeds, you can use a spice grinder to grind them up before making your porketta seasoning.

🥡 Storing

Keep your porketta seasoning in an airtight container or spice jar somewhere cool and dark (like a pantry or cabinet). It is best used within 6 months but will last for much longer.

What Is Porketta?

Porketta, or porchetta, is a pork loin roast. In Italy, they often wrap the roast in pork belly. However, in the United States, it is often just the roast without the pork belly on the outside.
With the US pork loin being so lean, I've found that a pork roast (butt or shoulder) best recreates a traditional porchetta roast.

What Can I Use Porketta Seasoning On?

Besides the obvious use (on porketta), you can use this seasoning on any pork roast! Not only that, but it is also delicious on beef roasts, roasted chicken, and turkey.

How Much Porketta Seasoning Do I Use?

For a 4-5 pound pork roast, you will use one batch of this seasoning (3.25 tablespoons). I recommend using ½ to 1 tablespoon of seasoning per pound for smaller roasts.
