I'd be lying if I said my crockpot was not one of my favorite kitchen appliances. It makes cooking so easy that it is perfect for those days when I don't feel like standing around the kitchen cooking.
While I do enjoy searing my roast before slow-cooking it, that's pretty much the only active work I have to do for this easy dinner recipe! After that, you can just set it and forget it!
🥘 Ingredients
Placing some onion and apple on the bottom of your slow cooker is a great way of adding some extra flavor to the roast! Of course, my tasty pork roast seasoning does a great job of contributing a ton of flavor as well!
- Olive Oil - 2 tablespoons of extra virgin olive oil for searing the roast. You can use your favorite neutral-flavored oil.
- Pork Ribeye Roast - 3-pound pork ribeye roast.
- Salt & Pepper - 1 tablespoon of both salt and pepper for seasoning.
- Onion - 1 large yellow onion that has been peeled and cut into slices.
- Apple - 1 large apple that has been sliced.
- Garlic - 2 teaspoons of minced garlic (or about 2 cloves).
- Pork Roast Seasoning - 1 tablespoon of pork roast seasoning. I love this homemade seasoning mixture, but you can use whatever seasonings you prefer!

🔪 How To Make Pork Roast In The Slow Cooker
Don't skip out on searing your pork before adding it to your crockpot! This step adds a ton of flavor to the meat! When you are ready to begin, you will need a sharp knife for slicing your apple and onion, a cast iron skillet, and your crockpot!
A 3-pound pork ribeye roast will be good enough food for 4 people (depending on how hungry everyone is!)
- Heat olive oil. In a cast iron skillet (or heavy-bottomed skillet) add 2 tablespoons of extra virgin olive oil and place it over medium-high heat.
- Sear the meat. Generously season your 3-pound pork ribeye roast with 1 tablespoon of both salt and pepper, making sure to season both sides of the meat. Then place the pork into the hot pan and sear both sides until golden brown, about 2-3 minutes per side.
- Add to the slow cooker. Place the 1 sliced apple, 1 sliced onion, and 2 teaspoons of minced garlic into the bottom of your slow cooker. Set the pork roast on top of the fruit and vegetables and season with 1 tablespoon of pork roast seasoning.
- Cook. Place the lid onto the crockpot and cook on high for 2-3 hours or low for 6 hours.
- Serve. Slice and serve with a side of vegetables.

- Making Gravy: Don't let the drippings from your slow cooker go to waste. Use them to create a savory and rich pork gravy, perfect for drizzling over your roast.

Keep any leftovers stored in an airtight container in the refrigerator for up to 4 days. Additionally, when placed into an airtight, freezer-safe container, this pork roast can be frozen for up to 6 months.
Reheating
You can reheat single servings of pork in the microwave and heat in 30-second intervals.
To reheat larger amounts, place the roast in a baking dish and cover it with aluminum foil. Bake in the oven at 350°F (175°C) until the internal temperature reaches 165°F (74°C). This could take 20-30 minutes. Then, allow the pork to rest for 15 minutes before serving.

❓ Recipe FAQs
I like to cook my pork roasts on low heat for 6-8 hours (depending on the size of the roast). This low and slow process makes the meat incredibly tender. However, you can also cook it on high heat for about 2-3 hours and have perfectly juicy pork as well!
The main difference between these two cuts of pork is the location from which they are cut. A pork ribeye roast is cut from the center of the ribs, while the pork loin is cut from the loin. If you want to learn more, I have an entire post dedicated to pork ribeye roast vs pork loin!
Well, it isn't completely necessary. Your pork will still cook just fine in the slow cooker, and you will still be able to eat it. However, searing the meat beforehand adds a ton of rich flavor, so I recommend it! If you want your meat to be as flavorful as possible, don't skip this step!

I made this tonight. I love pork but this was the first time hubby said this is the only recipe I should use. It was very tender and moist. I did brown and season day before and then cooked in greased pan, covered at 350 for 2 hours. Gravy was so flavorful. Served with mashed potatoes and creamed green beans. Yum!

Just made this, sliced off a tiny piece to taste and it is FANTASTIC. My roast was smaller though, abt a pound and a half. Good thing I checked it, because after 3 hrs on low it was at 150°. Cant wait to make the gravy for this.

Definitely! Just make sure that if the weight is different, you adjust the cooking time and keep a close eye on your tenderloin. I usually cook a tenderloin on low heat for 4 hours, and on high for 1 1/2-2 hours. Enjoy!
