Green bean casserole is a tasty and cozy side dish commonly associated with Thanksgiving. Typically, a traditional recipe features some cream of mushroom soup and canned green beans.
This variation, however, can easily be served as the main course since it is loaded with potatoes, sausage, bacon, and green beans! It is such a hearty and filling dish that no one will be hungry!

🥘 Ingredients
This is a super simple shopping list. There are no hard-to-find ingredients at all. In fact, you might already have some on hand!
- Bacon - 3 strips of thick-cut bacon that has been diced. Of course, you can leave out the bacon if you want. However, you'll need 2 tablespoons of extra virgin olive oil to saute your vegetables if you don't use bacon.
- Onion - 1 cup of diced yellow onion.
- Garlic - 2 teaspoons of minced garlic.
- Smoked Sausage - 14 ounces of smoked sausage or kielbasa, cut into bite-size chunks.
- Butter - ¼ cup of butter or a butter substitute.
- Potatoes - 2 pounds of russet potatoes that have been thoroughly washed and then diced.
- Green Beans - 1½ pounds of canned or frozen green beans.
- Cajun Seasoning - 1 teaspoon of Cajun seasoning. Try out my homemade blend, or use your preferred brand.
- Garlic Powder - 1 teaspoon of garlic powder.
- Pepper - ½ teaspoon of ground black pepper.
- Red Pepper Flakes - 1 pinch of crushed red pepper flakes.
- Beef Broth - ¼ cup of beef broth.

🔪 How To Make Green Bean Potato Sausage Casserole
This recipe is very easy to make; you just saute your vegetables and meat before combining everything and tossing it in the oven! Grab a Dutch oven (or casserole dish), a skillet, and a wooden spoon to get started.
This recipe will yield 6 filling servings.
Step 1: Preheat. To begin, preheat your oven to 400°F (205°C/Gas Mark 6) and lightly grease a 2.5-quart casserole dish or a Dutch oven.
Step 2: Saute. In a large skillet over medium-high heat, add your 3 strips of bacon and cook for 1 minute, stirring occasionally. Add in the 1 cup (160 grams) of diced onion and 2 teaspoons (6 grams) of minced garlic and cook until soft, about 3-4 minutes.
Step 3: Season and add sausage. Once the onion is tender, add in the seasonings (1 teaspoon (2 grams) of Cajun seasoning, 1 teaspoon (3 grams) of garlic powder, ½ teaspoon (1 gram) of pepper, and a pinch of crushed red pepper flakes). Stir to combine, and then add the 14 ounces (397 grams) of smoked sausage and ¼ cup (57 grams) of butter and cook until the butter has melted and your sausage chunks are lightly seared.
Step 4: Assemble casserole. In your casserole dish or Dutch oven, add 2 pounds (907 grams) of cubed potatoes and 1½ pounds (680 grams) of green beans. Top with the onion and sausage mixture and then stir gently to combine. Pour in the ¼ cup (59 milliliters) of beef broth.
Step 5: Bake. Cook, uncovered, in the preheated oven at 400°F (205°C/Gas Mark 6) for 40 minutes.
Step 6: Serve. Once done, remove from the oven and serve immediately.

- Potato Peeling: The choice to peel your potatoes is entirely yours. This recipe works wonderfully with both peeled and unpeeled potatoes, so go with your preference!
- Bacon Alternative: If you prefer not to use bacon, simply sauté your onion in 2 tablespoons of extra virgin olive oil instead. This will still give you a flavorful base for your dish.
- Slow Cooker Method: To adapt this recipe for a slow cooker, follow the preparation steps as usual. Then, cook the dish on a low setting for 6-8 hours for tender and flavorful results.
🥄 Make Ahead Options
To save yourself some time, you can prepare your green bean casserole in advance! Just assemble it as directed, but skip putting it into the oven.
Instead, tightly cover it and store it in the refrigerator for up to a day. When ready to finish up, uncover the dish and bake it as normal.

Reheating
I recommend reheating any leftovers in the oven for the best results. Heat the casserole at 350°F (175°C/Gas Mark 4) until hot.
If desired, you could also reheat small portions in the microwave.

Sure! Simply wash and trim your green beans, and then cook them in boiling water for just a few minutes. Drain them and immediately transfer them into an ice bath to stop the cooking process. Drain them again and then use them as directed in the recipe.
You absolutely can! Simply saute the onions, bacon, garlic, and sausage as directed. Then, instead of using a Dutch oven or casserole dish, add all of your ingredients to your slow cooker. Cook on low for 6-8 hours.
To make this casserole ahead of time, you can make it completely as directed up until the point of putting it in the oven. Store it in the fridge until you are ready, and then bake it as directed.
