Instructions
In a skillet over medium-high heat, brown the ground beef until no pink remains. Drain off the grease.
Add the cornstarch, salt, pepper, and onion powder to the ground beef and stir to combine and absorb any excess liquid in the pan.
Add beef broth and milk to the skillet and bring to a boil. Once boiling, add in the egg noodles and stir so they are mostly covered in liquid. Reduce heat to a simmer.
Simmer until the pasta is tender, about 15 minutes. Then turn off the heat and vigorously stir in the sour cream (*see note) followed by a splash of Worcestershire sauce.
Allow to cool slightly before serving.
Notes
You can use a leaner ground beef to reduce how much grease needs to be drained from your skillet. However, fattier ground beef like 80/20 ground chuck is my preferred ground beef as it adds more flavor.
The milk can boil over quickly, so don't walk away as your dinner is cooking. Be sure to keep a close eye on your skillet.
If your sauce is too hot, your sour cream can curdle when added to the pan. This is why it is important to turn off the stovetop and remove the pan from heat before mixing in the sour cream.
Keep in mind that your sauce will continue to thicken as it cools.
To store: Once leftovers cool, place them in an airtight container and refrigerate for 3-4 days. They can be frozen for up to 6 months if placed in a heavy-duty freezer bag with the air squeezed out.
To reheat: Thaw frozen hamburger helper beef stroganoff in the fridge overnight. Reheat individual portions in the microwave for 1-2 minutes. Alternatively, you can place it in a baking dish and bake at 350°F (175°C) for 10-20 minutes.
