These cinnamon sugar baked donuts are a slightly healthier alternative to everyone's favorite breakfast treat! There's no messy oil or splattering grease, and your donuts will bake up perfectly in under 30 minutes! Instructions
Lightly grease your donut pans (or mini donut pans) and preheat your oven to 425°F (218°C).
Add the wet ingredients (softened butter, oil, sugar, and light brown sugar) to a medium-sized mixing bowl and cream them together. Then, mix in the beaten eggs, baking powder, vanilla extract, nutmeg, and salt. Continue mixing until everything is evenly distributed.
Add the all-purpose flour and buttermilk in gradual amounts, alternating between the two. Mix until the batter is thoroughly combined, then stop. Do not over-mix it once everything has been evenly distributed.
Pour the donut batter into your greased donut pan, filling each mold approximately ⅔ of the way full.
Put the donut pan on the center of the middle rack of your oven and bake for 8- 10 minutes. They are ready when they have risen and are golden on the bottom (you should be able to see lightly browned edges).
Pull your baked donuts from the oven and let them sit in the pan for 5 more minutes before you flip them onto a wire cooling rack.
Brush melted butter over the warm donuts. Once cooled, combine the cinnamon and sugar and use it to coat the buttered donuts on all sides.
Notes
After your wet and dry ingredients are evenly dispersed and well-combined, there is no need to keep mixing. Overmixing the batter will make the donuts tough!
You may use a spoon to transfer the batter into the prepared pans, or use a piping bag or plastic storage bag with the corner snipped off.
Baked donuts tend to dry out easily. Test them by sticking a toothpick into the thickest part of the donut. It should come out with a few moist crumbs stuck to it.
To store: Baked donuts can be kept at room temperature for up to 24 hours. Store them in an airtight container or Ziploc storage bag to keep them fresh.
To freeze: Once cooled, your donuts may be frozen (preferably before filling or icing them). Place them in a heavy-duty freezer bag and squeeze out the excess air. Thaw the donuts in the microwave at 50% power and enjoy within 6 months.
