One of the easiest and most insanely delicious meals you will ever make is this White Cheddar Lobster Macaroni and Cheese! So rich and flavorful with succulent tender pieces of lobster meat throughout the gooey, cheesy deliciousness of a stove-top mac n cheese!
Originally I got this idea from going to a Ruth Chris Steakhouse and seeing their version of this as an appetizer.
What more needs to be said about anything as tantalizingly tasty as combining the most classic of comfort foods (mac n cheese) with the Cadillac of seafood (lobster)?! Not much, I'm sure 🙂
It's taken a while to get this post up and on the blog, but this fantastic lobster was from an order to one of our favorite online sources, the Clam Man. See the other recipes from our summer seafood splurge (with a few more stragglers yet to be added), including Lobster Jalapeno Poppers, Gordon Ramsay's HK Lobster Risotto, Steamed Clams, and Cod En Papillote.
🥘 Ingredients
The cheese varieties can easily be changed up for personal preferences. I used a creamy white cheddar combination of smoked white cheddar and white cheddar curds to compliment my perfect lobster mac. Yum!
- Elbow Macaroni (cooked, drained, rinsed)
- Butter (1 stick)
- All-Purpose Flour
- Seasoning - White ground pepper, salt, and onion powder.
- Heavy Cream - You can substitute whole milk.
- Cheeses - Cream cheese, white cheddar curds, and smoked white cheddar.
- Lobster Stock - Use my recipe or store bought.
- Lobster Meat - Remember to save a few choice pieces for additional garnish.
- Fresh Dill Sprigs - Optional garnish.
🔪 Instructions
- In a medium saucepan, melt the butter over medium heat.
- Once the butter is melted, add the flour (combined with seasoning - salt, white pepper, onion powder) and stir until a paste is formed.
- Next, pour in the heavy cream and stir until the mixture is smooth.
- Add the cubed cream cheese, stirring into the sauce mixture until mostly melted.
- Pour the lobster stock in slowly and warm the sauce up. War it up enough to finish melting the cream cheese.
- Add the chopped white cheddar curds. Stir until mostly melted.
- Then, add the chopped smoked white cheddar and stir until melted as well.
- Pour the cheese sauce over the cooked macaroni noodles, and stir to coat all of the pasta.
- Add the diced lobster meat and gently stir into your stove top macaroni and cheese.
- Finally, garnish with additional chunks of lobster meat and fresh dill sprigs, if desired.
- Serve immediately, and enjoy!
💠Angela's Pro Tips & Notes
- Do remember that if you are swapping out cheeses based on personal preferences or availability, that quality does matter.
- Ideally, you want lobster stock for this recipe. You can substitute real lobster stock with seafood stock or fish stock. I know there is a lobster flavored better than bouillon.
