Roasted Asparagus and Cherry Tomatoes with Garlic and Parmesan

If you haven't roasted asparagus before, this Roasted Asparagus and Cherry Tomatoes with Garlic and Parmesan Recipe will be such a delightful surprise! The addition of the tangy taste of cherry (or grape) tomatoes, roasted at the same time, highlights the delicious flavor of your roasted asparagus.

Roasted Asparagus and Cherry Tomatoes with Garlic and Parmesan makes an easy vegetable side dish to round out any meal!

Cherry tomatoes and asparagus compliment each other so well that I also use them together in my pan seared version, sauteed asparagus and cherry tomatoes!

This is a great way to serve up some tasty vegetables with minimal effort!

Plus, roasting the asparagus will bring out the sweetness and flavor in a way that is totally missed when steamed.

🥘 Ingredients

  • Asparagus
  • Cherry Tomatoes
  • Olive Oil
  • Salt & Pepper
  • Parmesan cheese
  • Garlic

🔪 Instructions

I love to throw a sheet of vegetables in the oven to roast when I have a bunch of other things going on the stove-top.

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper, or grease it thoroughly with additional olive oil or non-stick cooking spray.
  2. Place your asparagus and cherry tomatoes on the baking sheet, then drizzle with the olive oil.
  3. Season with salt & pepper, then sprinkle the minced garlic and Parmesan cheese directly over your asparagus and cherry tomatoes.
  4. Roast in your preheated oven set at 425°F (220°C) for 12-15 minutes, or until the asparagus has reached your desired level of tenderness.
  5. Serve immediately.

Ingredients
 

  • 1 bunch asparagus (rinsed, ends snapped off)
  • 1 container cherry tomatoes (or grape tomatoes)
  • 2 tablespoon olive oil (extra virgin)
  • salt & pepper (to taste)
  • ⅛ cup Parmesan cheese
  • 2 tablespoon garlic (minced)

(Note: 2x or 3x only changes the ingredient list)
