I don't want to mess with boiling and peeling eggs more than I have to, I usually make a full batch of dozen or so. It makes meal planning so much easier.

Boiled eggs last a week in the fridge, so I spend that week making egg-packed recipes like these. They're a great way to use up leftover Easter eggs, too.

1. Egg Salad

Whether it's for picnics, potlucks, or for an easy lunch, egg salad is a recipe everyone should keep in their back pocket. Serve it as a side dish, on a croissant, or bread as a quick sandwich, and my version has bacon.

2. Deviled Eggs

This is my signature classic recipe for deviled eggs made with both mayo and mustard for a perfectly creamy and slightly tangy yolk filling. This is a great base recipe, but trying out different mix-ins and toppings like crumbled bacon or diced pickles is half the fun.

3. Turkey Chef Salad

You can put sliced or chopped hard-boiled eggs on a standard green garden salad, but If you're looking for a heartier option, a chef salad is the way to go. I used leftover oven-roasted turkey here, but you could swap that for chicken or ham or leave the meat off altogether.

4. Leftover Ham Ramen

I'm the type of person who adds extra eggs to their ramen every time, so making it at home is a bonus because adding eggs to takeout doesn't come cheap. This ham ramen soup is one of my go-to's with leftover baked holiday ham after Easter and Thanksgiving.

6. Baked Scotch Eggs

Scotch eggs are often fried, but I prefer this baked version because it's much less greasy. The hard-boiled eggs are wrapped in seasoned ground sausage and baked until browned and crispy.

My tasty popper-inspired deviled eggs can be made as mild or spicy as you like, ask me, I know. My daughter loves spicy foods and has made these with some seriously hot flavor that's perfect with the cool, creamy filling.

Creamy avocado filled deviled eggs are delicious with or without the bacon - either way, they're completely satisfying as a snack or appetizer.

9. Pickled Eggs

Pickled eggs are super easy to make with onions, a little vinegar, sugar, and pickling spices. If you want a subtle kick and some extra flavor, I highly recommend adding pickled jalapeno slices.

10. Grated Egg Toast

If you are a fan of avocado toast like I am, you will more than enjoy this grated egg toast. You simply top a toasted slice of sourdough bread with creamy smashed avocado and topped with grated hard-boiled eggs.

11. Hard Boiled Egg Casserole

These BLT egg sliders are incredibly filling, you won't even miss the bread. They have all the classic components of a BLT - bacon, lettuce, tomato, and mayo sandwiched between two halves of a hard-boiled egg.

Honestly, I think any cold deli sandwich combo would taste great served this way.

💭 Tips For Making Hard-Boiled Eggs That Are Easy To Peel

I know how frustrating it can be to painstakingly peel boiled eggs tiny chip by chip, losing half the egg in the process. Here are a few of the tricks I use to make sure my hard-cooked eggs are picture-perfect and easy to peel.

  1. Use 'old' eggs. The fresher the eggs, the harder they will be to peel. If you're using farm-fresh eggs or eggs from your backyard chickens, eggs that are at least 7-10 days old are ideal. When using store-bought eggs, I let them age in my fridge for at least a week. *I've tested this with my own fresh eggs from my layers too!
  2. Shock the eggs. Transfer the cooked eggs to an ice cold water bath immediately. The temperature change shocks the eggs, firming up the inside and helping the membrane separate from the shell. Leave them in the ice bath for 10-15 minutes before peeling.
  3. Add vinegar to the water. Adding white or apple cider vinegar to the water helps dissolve some of the calcium carbonate in the shell. I add about ¼ cup to the pot of water before boiling, and no, it does not make the eggs taste like vinegar.
  4. Find the air pocket. This is usually at the bottom of the egg, but sometimes it moves around. It's a small, hollow section under the shell. This is where I find it easiest to get under the membrane to start peeling.

Ingredients
 

  • 6 large eggs (hardboiled)
  • 3 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard (or classic yellow mustard)
  • 1 teaspoon apple cider vinegar (or white vinegar)
  • each, salt & pepper (to taste)
  • paprika (optional)

(Note: 2x or 3x only changes the ingredient list)

Instructions
 

  • To hard boil your eggs, bring a pot of water to a full rolling boil. Turn the heat to low and use a skimmer or slotted spoon to slowly place your eggs into the water.
  • Return the heat to high and set the timer for 10 minutes.
  • Remove from heat when the timer is done, and rinse the eggs in cold water by placing the pan in your sink. Drain off the hot water and let cold water run over the eggs until cool enough to peel.
  • Tap the egg on your countertop to crack, and peel. Place peeled eggs into a storage container and cool in the refrigerator for 30 minutes to an hour.
  • Once cooled, slice eggs in half lengthwise. Pop the egg yolks out and place in a small bowl. Set the egg whites on a serving platter or in a storage container.
  • Mash the egg yolks using a fork until no large chunks remain. Add mayonnaise, Dijon mustard, apple cider vinegar, and season with salt and pepper.
  • Mix until creamy. Spoon small portions into the egg yolks, or pipe the egg yolk mixture if desired.
  • Top with paprika, chopped bacon, or chives if desired.

Notes

  • For a spicy twist, you can swap out the vinegar for a dash of Tabasco sauce!
  • Take a look at my Instant Pot hard-boiled eggs for an extra simple and fool-proof way to make perfect hard-boiled eggs every time!
  • When hard-boiling eggs, some people add vinegar or baking soda to the water. However, I've never noticed a difference in the ease of how my eggs peel.
  • You can fill your eggs with either a spoon or a piping bag. Use a large open star tip, like the Wilton brand 1M that I used here, to pipe the filling into each egg white.
