Ground beef taquitos are an easy and flavorful Mexican dish that consists of rolled corn tortillas wrapped around a seasoned beef mixture! The ground beef is sauteed with yellow onion, green chiles, garlic, and a blend of savory seasonings; then it's all fried in the tortilla to crispy perfection! Top them off with your favorite Mexican food toppings for a delicious snack, easy lunch, or quick family dinner!

Easy Beef Taquitos Recipe

If you're looking for a quick and easy Mexican-inspired dish that packs a punch of flavor, look no further than ground beef taquitos! These rolled-up tortillas filled with perfectly seasoned beef are a perfect finger food snack, appetizer, or lunch that will surely please everyone at the table.

You can top them off with your favorite Mexican food toppings or dip them into delicious dipping sauces! Either way, you'll love how easy it is to cook (or bake) them to golden perfection and how each bite is full of savory flavors!

🥘 Ground Beef Taquitos Ingredients

If you are a fan of Mexican food, then you might already have most of these ingredients on hand! If not, all of them are easy to find at the grocery store.

  • Ground Beef - 1 pound of ground beef.
  • Onion - ½ cup of yellow or white onion, chopped.
  • Green Chiles - 3-4 tablespoons green chiles (drained, approximately 1 ounce+).
  • Garlic - 2 teaspoons minced garlic.
  • Seasoning - ¾ teaspoon of chili powder, ground cumin, and ¼ teaspoon of salt & pepper (to taste). Or use my taco seasoning (*see notes).
  • Mexican Hot Sauce (optional) - 1 splash of Mexican Hot Sauce (brands like Cholula, Tapatio, El Pato, El Yucateco, or Valentina).
  • Tortillas - 12 6-inch corn tortillas.
  • Cheese (optional) - ½ cup Mexican cheese blend.
  • Oil - cooking oil (for frying).
  • Optional Toppings - shredded cheese, salsa, pico de gallo, sour cream, guacamole, and chopped cilantro can also be used.

🔪 How To Make Ground Beef Taquitos

Although it may seem like there are a lot of steps, this recipe is easier than you think! To begin, you will need a large deep skillet, a wooden spoon (or spatula), measuring utensils, a can opener, and silicone kitchen tongs.

This recipe makes a batch of 12 beef taquitos, so there is plenty to enjoy now and enough to save for later!

Make The Beef Filling

  1. Saute beef. Add 1 pound of ground beef to a large skillet over medium heat and cook until no pink remains. Use a wooden spoon or spatula to break up the meat as it cooks, then drain off any excess grease and return the pan with the ground beef to the stovetop.
  2. Add ingredients. Add ½ cup yellow onion, 3-4 tablespoons of green chiles, and 2 teaspoons of garlic to the ground beef and continue to cook until the onions are translucent (about 4-5 minutes).
  3. Season. Sprinkle in ¾ teaspoon of chili powder, ¾ teaspoon of ground cumin, and ¼ teaspoon each of salt & pepper (to taste), plus the hot sauce, if using. Stir to combine. Cook for 2-3 minutes more and set aside.

Assemble & Fry The Taquitos

  1. Warm. To make the tortillas pliable and easy to roll, warm them in the microwave for 30 seconds or in a dry skillet over medium heat for 10-15 seconds.
  2. Assemble. Spoon 1-2 tablespoons of the ground beef mixture into the center of each corn tortilla. If desired, top the meat with ½ cup of shredded Mexican cheese blend, and roll your taquitos up tightly.
  3. Preheat. Pour the frying oil into a deep skillet set over medium-high heat until the oil reaches 350°F (175°C).
  4. Fry. Put your taquitos into the hot oil with the seam facing down. Fry, occasionally turning with tongs, for 2-3 minutes or until they turn golden brown and crispy.
  5. Drain. Use tongs or a slotted spoon to remove the beef taquitos from the oil and transfer them to a wire cooling rack with a plate lined with paper towels beneath it to catch any oil drips.
  6. Serve. Serve with your favorite dipping sauces or Mexican food toppings.

These tasty taquitos are delicious as-is, but you can always dip them in sour cream, salsa, or guacamole. You can also top them with your favorite Mexican food toppings and serve them with rice and refried beans for a complete meal. Enjoy!

💭 Angela's Pro Tips & Recipe Notes

  • You can use 1½-2 teaspoons of my homemade taco seasoning instead of the cumin and chili powder for convenience.
  • Try not to overfill the taquitos, or they will be hard to roll and can burst open while they are frying.
  • If needed, you can get your fingertip wet and run it around the edge of each tortilla to seal them before frying.
  • If you prefer not to fry your taquitos, put them on a baking sheet seam-side-down and bake them at 425°F (218°C) for 15-20 minutes.
  • To cook ground beef taquitos in your air fryer, place them seam-side-down in the air fryer basket and cook at 400°F (205°C) for 4-5 minutes. Flip them over and cook for another 3-4 minutes until crispy.
  • To prepare your beef taquitos in advance, you can assemble them and place them on a baking sheet. Pop the baking sheet into the freezer for a few hours until fully frozen. Then, transfer the taquitos to a freezer bag or other freezer-safe container. You can fry them directly from frozen when ready to serve.

🥡 Storing & Reheating

Leftover ground beef taquitos should be placed in an airtight container or sealed storage bag. You can keep them in the fridge for up to 5 days.

Freezing Ground Beef Taquitos

Cooked taquitos can also be frozen using the same method above. Once cooled, flash freeze them on a baking sheet before transferring them to a heavy-duty freezer bag. Use within 3 months. There's no need to thaw taquitos before reheating, either!

Reheating Ground Beef Taquitos

There are 2 ways to reheat taquitos. You can put them on a baking sheet in the oven at 300°F (150°C) for 15 minutes or pop them in the air fryer at 350°F (175°C) for 4 minutes. The air fryer yields the crispest results.

What Dipping Sauces Go Well Beef Taquitos?

Some popular dipping sauces for beef taquitos include salsa, guacamole, sour cream, or a combination of all three! My creamy avocado ranch or creamy spicy ranchero sauce would be delicious too!

Why Did My Taquitos Burst Open While Frying?

You might have overstuffed the tortillas with the beef mixture if this happened. 1-2 tablespoons of the beef mixture will be enough to fill the corn tortillas but leave some room for the shredded cheese (if using).

How Can I Make Sure That My Taquitos Stay Crispy?

To achieve the perfect crispy texture, the frying oil must be right at 350°F (175°C) when frying the taquitos. Also, it's very important not to overcrowd your pan while frying.
When you are finished cooking, immediately transfer the taquitos to a wire cooling rack with paper towel-lined plates underneath so that the excess oil drops off. This is what will help keep them stay crispy!

Ingredients
 

  • 1 lbs ground beef
  • ½ cup yellow onion (chopped, or white onion)
  • 3-4 tablespoon green chiles (drained, approximately 1 ounce+)
  • 2 teaspoon garlic (minced)
  • ¾ teaspoon chili powder
  • ¾ teaspoon ground cumin
  • ¼ tsp each, salt & pepper (to taste)
  • 1 splash Mexican Hot Sauce (optional - brands like Cholula, Tapatio, El Pato, El Yucateco, or Valentina)
  • 12 6-inch corn tortillas
  • ½ cup Mexican cheese blend (optional)
  • cooking oil (for frying)
  • cheese, salsa, pico de gallo, sour cream, guacamole, chopped cilantro (optional toppings)

  • Heat a large skillet over medium heat, add the ground beef, and cook until no pink remains. Use a wooden spoon or spatula to break up the meat as it cooks, then drain off any excess grease and return the pan with the ground beef to the stovetop.
  • Add the yellow onion, green chiles, and garlic to the ground beef and continue to cook until the onions are translucent (about 4-5 minutes).
  • Sprinkle in the chili powder, cumin, and salt & pepper, plus the Mexican hot sauce (if using). Stir to combine. Cook for 2-3 minutes more and set aside.
  • To make the tortillas pliable and easy to roll, you can microwave them for 30 seconds or warm them for 10-15 seconds in a dry skillet.
  • Spoon 1-2 tablespoons of the ground beef mixture into the center of each corn tortilla. Top the meat with shredded Mexican cheese blend if desired, and roll your taquitos up tightly.
  • Pour the frying oil into a deep skillet set over medium-high heat until the oil reaches 350°F (175°C).
